These Teriyaki Chicken Skewers are what you want to be making this summer. Lightly marinaded teriyaki chicken grilled to tender perfection. This is a great dinner for weekend entertaining, family dinners or even for pot lucks.
In a small glass, combine the cornstarch with about 2-3 tablespoons of the water. Stir well to combine and set aside.
In a small saucepan set over medium heat, add the soy sauce, brown sugar, honey and garlic. Stir well and bring to a gentle simmer for about 2 minutes. Add all the water and bring to a boil. Pour in the cornflour mixture and stir until it thickens, about one minute. Remove from heat and set aside.
In a large bowl, combine the cubed chicken with about 2/3 of the sauce. Coat completely, cover and refrigerate for one hour.
Remove from the fridge and skewer the chicken pieces with the onion pieces. Alternating both the chicken and the onion pieces. Repeat until you have used all your chicken and onions.
Set the grill to medium heat. Place the chicken skewers on the grill and cook, turning frequently for about 12 - 15 minutes in total. Chicken will be tender with no pink spots when fully cooked.
Remove from barbecue, garnish with sesame seeds and serve with the extra sauce for dipping.
