Season both sides of the turkey cutlets with salt and pepper. Set asdie.
In a large skillet set over high heat, add the olive oil. Add the turkey cutlets and cook for 3 minutes. Turn over the cutlets and cook for another 3 minutes. You are not looking to cook the turkey fully, just to brown it on the outside. Remove from the skillet and set aside.
In the same skillet, reduce the heat to medium and add the butter and bring it to a sizzle, about one minute. Add the garlic and give a quick stir. Next add the Dijon mustard, oregano, garlic powder and flour. Stir well until it forms a paste and becomes fragrant, about one minute. Gradually start pouring in the chicken broth, whisking as you pour to ensure it stays smooth. Bring to a simmer and add the cream Whisk until it comes to a simmer, about 2 minutes. Reduce heat to low.
Add the turkey cutlets to the sauce, cover and cook for about 10 minutes. Remove cover and add the fresh parsley.
Serve hot with the sauce poured over the turkey cutlets.
