Scrambled Eggs with Smoked Salmon

Ingredients

  • 2 Eggs
  • 2 Tablespoons milk
  • 1 small spring onion finely chopped
  • Small amount of finely chopped fresh parsley
  • 1 Slice smoked salmon
  • Little drizzle of olive oil
  • A few cherry tomatoes halved
  • Salt and pepper to taste

Instructions

  • Whisk the eggs with the milk in a small bowl. Roughly chop up your smoked salmon.
  • In a medium skillet set over a medium add the oil and toss in your eggs. Cook for just a few minutes stirring as you go. As the eggs start to come together you will only need to cook them for probably 30 more seconds. Add in the smoked salmon, spring onions and parsley. Season with salt, give a quick stir and immediately remove from heat. Serve with crisp tomatoes on the side and lots of black pepper!
