Make these Bacon and Cheddar Stuffed Mushrooms for the perfect fall appetizer. Earthy mushrooms stuffed with a bacon herb bread stuffing and topped with cheddar cheese. Make in advance and pop in the oven just before serving.
Preheat oven to 350ºF/180ºC and have ready an 8 x 8 inch baking dish.
Remove the mushroom stems and finely chop them up small. Set the chopped stems aside. Place the mushroom caps in the baking dish.
In a medium sized skillet set over medium heat add the olive oil, diced onions and the chopped mushroom stems. Cook until soft, about 5 to 8 minutes. Remove the the skillet and add the chopped bacon to the skillet. Cook the bacon until the fat is rendered, this will take about 5 minutes. Remove the bacon from the skillet and drain the fat. Discard the fat.
Add the breadcrumbs, garlic powder, salt, black pepper, fresh parsley, cooked onions & mushroom stems, cooked bacon and butter to the skillet over medium heat. Stir really well to combine. Cook for 2 - 3 minutes and remove from heat.
Firmly press the stuffing into each mushroom cap until all the mushrooms have been filled. Top with cheddar cheese. Cover with aluminum foil and bake for 15 minutes. Remove the foil and bake for a further 5 minutes. Serve hot or at room temperature.

Notes
Make your own bread crumbs - The stuffing for this recipe is made from real bread crumbs not the small fine ones you can buy in a bag in the supermarket. I just used wholewheat bread and put it through a food processor until the bread turned crumbly, about 20 - 40 seconds. Alternatively you can probably buy fresh bread crumbs at your local grocery store.
Make sure to drain the fat from the bacon - After you cook the bacon, make sure to drain off all the fat otherwise the stuffing will by very greasy.
Prep ahead - You can prep these mushroom the day before and bake just before serving at a party.
