What Are These Stuffed Mushrooms Like
- Difficulty – This recipe uses all fresh ingredients and is pretty straight forward to make. It has a few components and takes about 30 minutes to assemble and then you have to bake them for 15 – 20 minutes. They can be prepped in advance.
- Taste – These little bites have a meaty bite filled with homemade stuffing with flavours of herbs, bacon and onions. Honestly, a fantastic fall appetizer.
- Serving – This recipe will make between 12 – 20 stuffed mushrooms depending on the size of the mushrooms you are using. My mushrooms were a little varied in size and I got 16 servings from this recipe.

Ingredients
- Mushrooms – I used fresh cremini mushrooms. These are a very common variety, brown in colour and found in most all supermarkets.
- Olive oil – I used olive oil to cook down the onions and mushroom stems.
- Onion – A finely chopped white onion is cooked down and added to the stuffing.
- Bacon – Chopped streaky bacon is cooked up until almost crispy and added to the stuffing.
- Bread crumbs – I used homemade bread crumbs from sliced wholewheat bread.
- Seasonings – A combination of garlic powder, salt and black pepper.
- Parsley – I always like to add a fresh herb to stuffing. Parsley was my choice for this stuffing.
- Butter – A little butter adds a great flavour to the stuffing.
- Cheddar cheese – The mushrooms caps are topped with cheddar cheese before baking.

Instructions
- Preheat oven – Preheat oven to 350ºF/180ºC and have ready an 8 x 8 inch baking dish.
- Chop mushroom stems – Remove the mushroom stems and finely chop them up small. Set the chopped stems aside. Place the mushroom caps in the baking dish.
- Cook onions, mushroom stems and bacon – In a medium sized skillet set over medium heat add the olive oil, diced onions and the chopped mushroom stems. Cook until soft, about 5 to 8 minutes. Remove the the skillet and add the chopped bacon to the skillet. Cook the bacon until the fat is rendered, this will take about 5 minutes. Remove the bacon from the skillet and drain the fat. Discard the fat.
- Make stuffing – Add the breadcrumbs, garlic powder, salt, black pepper, fresh parsley, cooked onions & mushroom stems, cooked bacon and butter to the skillet over medium heat. Stir really well to combine. Cook for 2 – 3 minutes and remove from heat.
- Bake and serve – Firmly press the stuffing into each mushroom cap until all the mushrooms have been filled. Top with cheddar cheese. Cover with aluminum foil and bake for 15 minutes. Remove the foil and bake for a further 5 minutes. Serve hot or at room temperature.






Recipe Tips
- Make your own bread crumbs – The stuffing for this recipe is made from real bread crumbs not the small fine ones you can buy in a bag in the supermarket. I just used wholewheat bread and put it through a food processor until the bread turned crumbly, about 20 – 40 seconds. Alternatively you can probably buy fresh bread crumbs at your local grocery store.
- Make sure to drain the fat from the bacon – After you cook the bacon, make sure to drain off all the fat otherwise the stuffing will by very greasy.
- Prep ahead – You can prep these mushroom the day before and bake just before serving at a party.

Substitutions
- Mushrooms – I recommend using any kind of fresh mushrooms for this recipe . Portobello, Button or Shiitake are all great alternatives.
- White onion – You can use brown onion, spring onions, leeks or green onions.
- Cheddar cheese – Alternatively, mozzarella, Gouda, Swiss or parmesan are all great choices.

Ingredients
- 1 lb fresh mushrooms
- 1 tablespoon olive oil
- 1/2 small onion finely diced
