Take a twist on regular roasted potatoes with these Bacon Roasted Potatoes with honey. Perfectly golden and tender roasted potatoes topped with salty bacon and sweetened honey. A great fall or Thanksgiving Side dish.

Preheat oven to 400ºF/200ºC and have ready a large baking tray.
Place the potatoes in a saucepan of boiling water and parboil for about 10 minutes. Remove the potatoes from the heat and drain. Place the potatoes on the baking tray, drizzle over the olive oil and season with garlic powder, salt and black pepper. Stir to make sure all the potatoes are seasoned well. Place in the preheated oven and roast for about 40 minutes or until soft and golden.
While the potatoes are cooking, place the bacon in a small skillet placed over medium heat. Bring to a sizzle and cook the bacon until it is slightly crisp. Remove from heat and add the honey and parsley. Stir well to combine.
Pour the bacon mixture over the potatoes and mix well to combine. Serve hot.
