What Are These Potatoes Like
- Difficulty – This is a pretty easy recipe to make, it does not require too many ingredients and there is no special techniques or equiptment.
- Taste – These potatoes are savoury with a smoky, salty and sweet taste. They have a crisp exterior and a fluffy and soft on the inside. The honey adds just enough sweet without it being overpowering.
- Serving – This Side Dish will serve between 4 – 6 people at a dinner with a main course. If you are looking to only have these as a side dish, I would say this recipe will serve 4 adults.

Ingredients
- Potatoes – This recipe uses large russet style potatoes.
- Olive oil – Olive oil is used to roast the potatoes.
- Seasonings – I used a combination of garlic powder, salt and black pepper.
- Bacon – This recipe used thin streaky bacon.
- Honey – Any kind of honey will work for these potatoes. I used just regular liquid honey.
- Parsley – Parsley adds a little freshness to the potatoes.

Instructions
- Preheat oven – Preheat oven to 400ºF/200ºC and have ready a large baking tray.
- Cook potatoes – Place the potatoes in a saucepan of boiling water and parboil for about 10 minutes. Remove the potatoes from the heat and drain. Place the potatoes on the baking tray, drizzle over the olive oil and season with garlic powder, salt and black pepper. Stir to make sure all the potatoes are seasoned well. Place in the preheated oven and roast for about 40 minutes or until soft and golden.
- Make bacon topping – While the potatoes are cooking, place the bacon in a small skillet placed over medium heat. Bring to a sizzle and cook the bacon until it is slightly crisp. Remove from heat and add the honey and parsley. Stir well to combine.
- Combine and serve – Pour the bacon mixture over the potatoes and mix well to combine. Serve hot.




Recipe Tips
- Type of potato – Choosing the type of potato matters for getting crisp potatoes. Choose a roasting potato like the Russet, Maris Piper or King Edward potatoes.
- Cut the potatoes into the same size – It’s important to cut the potatoes as close to the same size as you can. This will ensure even roasting.
- Parboil the potatoes until they are just starting to go go soft – You should be able to slightly pierce them with a fork. You don’t want them soft all the way, just starting to cook.

Substitutions
- Potatoes – I used large roasting potatoes. You can choose to use any kind of roasting potato for this recipe.
- Olive oil – You can use sunflower oil or canola oil.
- Garnish – You do not need to garnish these potatoes, it’s completely optional. I used fresh chopped parsley. However, fresh chives would be nice as well.
