This Baked Zucchini Pasta is a great mid week comfort. Tender pasta noodles with sauteed zucchini in a rich tomato sauce and topped with fresh mozzarella cheese. Make in advance, pop it in the fridge and bake when ready.

Ingredients
8ozpenne pasta
2tablespoonsolive oil
3clovesGarlic minced
1zucchinihalved length ways and cut into 1/2 inch pieces
Preheat oven to 350 degrees F and have ready a deep sided 8 inch baking dish.
Cook pasta according to package. Drain and set aside.
While the pasta is cooking, cook the zucchini. In a large skillet set over medium high heat, add the olive oil, garlic and zucchini. Stir well and cook for about 10 minutes. The zucchini should be tender and golden.
In a casserole dish or cast iron skillet, combine the pasta, zucchini and sauce. Add the salt, pepper and fresh parsley. Stir really well to combine.
Evenly sprinkle over the mozzarella cheese. Cover and bake for 20 minutes. Remove foil and bake for a further 10 minutes until golden and bubbly.
Remove from oven and serve hot.
