Baked Zucchini Pasta

This Baked Zucchini Pasta is a great mid week comfort. Tender pasta noodles with sauteed zucchini in a rich tomato sauce and topped with fresh mozzarella cheese. Make in advance, pop it in the fridge and bake when ready.

Ingredients

  • 8 oz penne pasta
  • 2 tablespoons olive oil
  • 3 cloves Garlic minced
  • 1 zucchini halved length ways and cut into 1/2 inch pieces
  • 3 cups spaghetti sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chopped parsley
  • 6 oz mozzarella grated

Instructions

  • Preheat oven to 350 degrees F and have ready a deep sided 8 inch baking dish.
  • Cook pasta according to package. Drain and set aside.
  • While the pasta is cooking, cook the zucchini. In a large skillet set over medium high heat, add the olive oil, garlic and zucchini. Stir well and cook for about 10 minutes. The zucchini should be tender and golden.
  • In a casserole dish or cast iron skillet, combine the pasta, zucchini and sauce. Add the salt, pepper and fresh parsley. Stir really well to combine.
  • Evenly sprinkle over the mozzarella cheese. Cover and bake for 20 minutes. Remove foil and bake for a further 10 minutes until golden and bubbly.
  • Remove from oven and serve hot.
