Caramelized Onion and Spinach Stuffed Chicken

Why not up your weeknight dinners with this Caramelized Onion and Spinach Stuffed Chicken. Chicken breasts stuffed with caramelized onions, spinach and even dates. Easy enough for mid week meals and fancy enough for guests.

Ingredients

  • 1 1/2 lbs chicken breast approximately 3 - 4 small chicken breast
  • 1 large onion peeled, halved and thinly sliced
  • 12 dates roughly chopped
  • 2 cloves garlic minced
  • 5 cups spinach small amount reserved for serving
  • 4 tablespoons olive oil divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Preheat oven to 350ºf/180ºc and have ready a medium sized deep sided baking dish. Set aside.
  • On a clean surface, lay out the chicken breast. Using a kitchen mallot, lightly flatten each chicken breast. Next, slice the chicken breast open through the centre and open up the chicken breast. (see photos in post if you are unsure). Set the chicken aside.
  • In a medium skillet set over medium heat, add 2 tablespoons of the olive oil. Add the onions and cook for about 5 - 8 minutes or until browned. Reduce heat to medium low and continue to cook for about 10 more minutes until the onions have caramelized. Add the chopped dates and garlic. Stir well and cook for a further minute or so. Add the spinach and stir until wilted, about one minute. Remove from heat.
  • Lay out the prepared chicken breast on a clean surface. Evenly fill each chicken breast with the filling. Fold over and press firmly down. Place the chicken in the baking dish. Season the tops with salt and pepper and drizzle over remaining olive oil.
  • Bake between 25 - 30 minutes or until fully cooked. Half way through cooking, spoon pan juices over the chicken.
  • Serve hot with your favourite vegetable side dishes.
