Looking for something a little different this week? This Caramelized Onion and Spinach Stuffed Chicken dish is a real surprise that you might like to try out. I first made this dish way back in 2011 and put it here on my Blog in 2015. Honestly, I completely forgot about it until I was searching for a stuffed chicken breast recipe a few weeks back. Then I remembered this delicious Chicken dish, and updated the photos and recipe notes for you all. Keep reading to see if you’d like to add it to your dinner rotation soon.

What is This Chicken Dish Like
- Difficulty – This is a pretty easy dish. You can even do all the prep work before hand and pop it in the fridge until cooking time.
- Taste – The filling for this dish has one surprise ingredient, dates! They are finely chopped and add a little sweetness to the dish. Absolutely delicious!
- Serving – This dish will make between 3 – 4 servings. It really depends on the size of the chicken breast you use. You can use two large chicken breast and then cut them in half after cooking.

Ingredients
- Chicken breast – This recipe uses boneless and skinless chicken breast. They are lightly flattened and then butterflied open to allow to fill them.
- Onion – I used one large onion, cut into thin slices. The onions are caramelized.
- Dates – Pitted dates that are finely chopped add a unique and wonderful flavour to the filling for this chicken dish.
- Garlic – I added a few minced garlic cloves to the filling.
- Spinach – Fresh spinach was added to the filling.
- Olive oil – Olive oil is used to caramelize the onions as well as to drizzle over the chicken before cooking.
- Seasonings – I simply seasoned the chicken with salt and pepper.

Instructions
- Preheat oven – Preheat oven to 350ºf/180ºc and have ready a medium sized deep sided baking dish. Set aside.
- Flatten and butterfly chicken – On a clean surface, lay out the chicken breast. Using a kitchen mallot, lightly flatten each chicken breast. Next, slice the chicken breast open through the centre and open up the chicken breast. (see photos in post if you are unsure). Set the chicken aside.
- Make filling for the chicken – In a medium skillet set over medium heat, add 2 tablespoons of the olive oil. Add the onions and cook for about 5 – 8 minutes or until browned. Reduce heat to medium low and continue to cook for about 10 more minutes until the onions have caramelized. Add the chopped dates and garlic. Stir well and cook for a further minute or so. Add the spinach and stir until wilted, about one minute. Remove from heat.
- Fill chicken – Lay out the prepared chicken breast on a clean surface. Evenly fill each chicken breast with the filling. Fold over and press firmly down. Place the chicken in the baking dish. Season the tops with salt and pepper and drizzle over remaining olive oil.
- Bake – Bake between 25 – 30 minutes or until fully cooked. Half way through cooking, spoon pan juices over the chicken.
- Serve – Serve hot with your favourite vegetable side dishes.








Recipe Tips
- Finely chop dates – Make sure to finely dice the dates. You can do this with a knife or in a food processor. You are looking for them to be incorporated into the filling without having any pieces that you really bite into.
- Prep ahead – You can prep the filling in advance up to an entire day. Just keep it covered in the fridge until you are ready to fill and cook the chicken.

Substitutions
- Chicken breast – I used boneless skinless chicken breast for this recipe. You can use bone in with skin chicken breast. Alternatively you can use chicken thighs and cut them open through the tops. Keep in mind different cuts of chicken will cook at different times.
- Dates – You can leave the dates out if you don’t like the flavour.

Serving
- Salads – A fresh salad to go on the side of this would work really well. Why not take a look at the Mediterranean Tossed Salad or the Classic Caprice Salad.
- Breads – Of course you can serve with pasta! Garlic Knots are one of our family favourites and even the Rustic Loaf would be great.
- Potato dishes – I highly recommend the Potato and Leek Cakes or the Roasted Rosemary Potatoes. Both equally delicious with this sauce.

Dates are a sweet and chewy fruit that come from the date palm tree. Yes, they are a fruit and are commonly grown in the Middle East and the Mediterranean regions. They are used in both sweet and savoury dishes.
Chicken will be fully cooked when a meat thermometer inserted into the thickest part reaches 165ºF/74ºC. If you are new to cooking chicken, I do recommend using a meat thermometer to be on the safe side.
