Dive into a bowl of these Chicken Parmesan Meatballs one evening soon. Tender meatballs made with ground chicken, parmesan cheese and lots of seasonings. Finished off in a rich marinara sauce for a fantastic flavour.
In a large skillet add one tablespoon of the olive oil, the diced onions and the garlic. Stir well and cook over medium heat for about 5 - 7 minutes until soft and golden. Remove from heat.
In a large bowl combine the bread crumbs, milk and cooked onions. Stir well to combine. Add the ground chicken, 1/3 of the parmesan cheese, garlic powder, oregano, salt, black pepper and parsley to the bread crumb mixture. Using your hands or a large wooden spoon, stir the mixture until just combined. Set aside.
In a large skillet add the remaining 3 tablespoons of olive oil over medium heat. Using a tablespoon, scoop out meatballs. They do not need to be perfectly round. Fit as many in the pan as you can at one time. I managed to fit 10 in my skillet. Brown all over for about 5 minutes. They will just be browned at this point and not fully cooked. Remove from the pan and drain on paper towels. Repeat for all meatball mixture.
Add the marinara sauce to the skillet and return all of the browned meatballs. Reduce heat to low, cover and cook for about 15 minutes. After this time, add remaining 1/3 cup of parmesan cheese stir well until combined.
Serve hot with bread or over pasta noodles.
