Dive into a bowl of these Chicken Parmesan Meatballs one evening soon. Tender meatballs made with ground chicken, parmesan cheese and lots of seasonings. Finished off in a rich marinara sauce for a fantastic flavour.

Today I’m bringing you another great Back to School Dinner Recipe. These meatballs are a great family staple that will get your kids to the dinner table. I know it’s busy season for many families right now and we’re looking for Easy Dinners that our families will love. What Are These Meatballs Like
- Difficulty – These meatballs are easy to make but I’d rate the recipe as medium difficulty. They take a little time between making the sauce and putting together the meatballs. It’s also important to follow instructions carefully to achieve tender meatballs.
- Taste – The flavour and texture of these meatballs are both amazing. Lean tender chicken meatballs wrapped up in a creamy tomato sauce.
- Serving – I used 1lb of ground chicken for this recipe which made 20 meatballs. These were pretty small meatballs and will serve between 4 – 6 adults depending on the serving size.

Ingredients
- Olive oil – This recipe uses olive oil to cook the onions and to brown the meatballs.
- Onion – I used 1/2 of a small white onion finely diced to add to the ground chicken.
- Garlic – Minced garlic was added to the onions for extra flavour.
- Bread crumbs – I used panko bread crumbs for a binder.
- Milk – I used semi skimmed milk. This is added to the bread crumb mixture to keep the meatballs tender.
- Parmesan cheese – Fresh grated parmesan cheese is actually added to the ground chicken mixture as well as the sauce at the end of cooking.
- Seasonings – I seasoned the ground chicken with garlic powder, oregano, salt and black pepper.
- Fresh herbs – This recipe uses fresh chopped parsley that’s added to the ground chicken meatball mixture.
- Marinara Sauce – I used pre made Homemade Marinara Sauce. But you can easily buy your favourite sauce at your grocery store.

Instructions
- Cook onions – In a large skillet add one tablespoon of the olive oil, the diced onions and the garlic. Stir well and cook over medium heat for about 5 – 7 minutes until soft and golden. Remove from heat.
- Make meatball mixture – In a large bowl combine the bread crumbs, milk and cooked onions. Stir well to combine. Add the ground chicken, 1/3 of the parmesan cheese, garlic powder, oregano, salt, black pepper and parsley to the bread crumb mixture. Using your hands or a large wooden spoon, stir the mixture until just combined. Set aside.
- Brown meatballs – In a large skillet add the remaining 3 tablespoons of olive oil over medium heat. Using a tablespoon, scoop out meatballs. They do not need to be perfectly round. Fit as many in the pan as you can at one time. I managed to fit 10 in my skillet. Brown all over for about 5 minutes. They will just be browned at this point and not fully cooked. Remove from the pan and drain on paper towels. Repeat for all meatball mixture.
- Cook meatballs in sauce – Add the marinara sauce to the skillet and return all of the browned meatballs. Reduce heat to low, cover and cook for about 15 minutes. After this time, add remaining 1/3 cup of parmesan cheese stir well until combined.
- Serve – Serve hot with bread or over pasta noodles.











Recipe Tips
- Prep ahead meatballs – You can make the meatballs up to the day before and keep them in the fridge. Alternatively, you can make and freeze them from uncooked. You can freeze uncooked meatballs up to two months. Just be sure to allow them to fully defrost before cooking.
- Don’t overwork the ground chicken – The secret to getting a great meatball, is to not overwork the meat. Mix the ingredients until just combined. When forming into meatballs, do it gently and quickly. If you overwork the meat, they will be tough.
- Finely dice the onions – You are looking to really finely dice the onions so they incorporate into the meatballs well.

Substitutions
- Ground chicken – Any kind of ground meat will work for this recipe like beef, turkey, pork or lamb.
- Bread crumbs – I used panko bread crumbs. Any fine bread crumbs will work well.

Serving
These Chicken Parmesan Meatballs are great served just as they are, honestly! But you can serve spaghetti or any other pasta noodles for a more substantial meal. A few other great sides are the Fluffy White Dinner Rolls, Garlic Knots or the Cheesy Garlic Fingers.

Chicken Parmesan Meatballs
Ingredients
- 4 tablespoons olive oil divided
- 1/2 small onion finely diced

- 28 ounces marinara sauce
