Honey Parmesan Chicken

Ingredients

  • 1 1/2 lbs chicken breast
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/3 cup honey
  • 1/4 cup lemon juice
  • 1/3 cup parmesan cheese
  • 1/2 teaspoon chilli flakes
  • 1 tablespoon parsley finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Place the chicken breast between two sheets of parchment paper. Using a kitchen mallet, pound the chicken to about 1 inch thickness and set aside.
  • In a small saucepan set over medium heat, add the olive oil and garlic. Bring to a sizzle for about one to two minutes. Reduce heat to low and add the honey, lemon juice, chilli flakes, parmesan cheese, parsley, salt and pepper. Stir really well to combine and bring to a simmer. Remove from heat.
  • Place the chicken in a deep sided dish and pour over the marinade. Cover and refrigerate for one hour.
  • Preheat oven to 350ºF/180ºC and have ready a baking tray. Remove the chicken from the fridge and place on your baking tray. Pour over the marinade from the dish. Bake between 25 - 30 minutes until the chicken is fully cooked and golden.
  • Remove from oven and allow to rest for about 5 minutes. Slice and serve. Pour over any pan juices.
