If you love stove top rice dishes, you have to give this Pork Fried Rice in a Wok a try! I used left over long grain rice with pork tenderloin, some diced vegetables, eggs and soy sauce. It's a great weeknight dinner or can be part of a bigger buffet meal!

Ingredients
1lbpork tenderloincut into small pieces
1teaspoon salt
2tablespoonssesame oildivided
2clovesgarlicminced
3mediumcarrotspeeled, ends trimmed and diced really small
Set a large wok over high heat and add one tablespoon of the sesame oil. Season the cubed pork with the salt and add to the wok. Toss really well and cook until the pork is golden and cooked through, about 8 to 10 minutes. Remove the pork from the wok and set aside.
In the same wok, set over medium heat, add the remaining tablespoon of sesame oil and garlic. Give a good stir for about 30 seconds. Add the carrots, celery and onions. Toss really well and cook until soft, about 5 - 8 minutes.
Push the vegetables to one side of the wok and pour in the whisked eggs on the other side. Using a spatula, start stirring the eggs until they are almost cooked. Then incorporate the eggs into the cooked vegetables.
Add the cooked rice, green peas, cooked pork and soy sauce to the wok. Increase heat to high and stir really well until all the flavours have completely incorporated.
Remove from heat and serve hot with extra soy sauce, teriyaki sauce or chilli sauce.
