Ingredients

  • 3 tablespoons olive oil divided
  • 1/4 cup brown sugar
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 lb pork tenderloin
  • 2 tablespoons butter
  • 1/2 onion diced small
  • 2 apples cored and cut into wedges
  • 1 bay leaf
  • 1/2 cup chicken broth

Instructions

  • In a small bowl combine 2 tablespoons of the olive oil, brown sugar, thyme, rosemary, black pepper and salt. Stir well to combine.
  • Pat dry the pork with paper towels and coat with the seasoning. Set a heavy bottomed skillet over high heat and add the remaining 1 tablespoon of olive oil. Place the pork in the skillet and sear for about 2 - 3 minutes until golden and then flip over the pork. Sear the other side for another 2 - 3 minutes and remove from heat.
  • Preheat oven to 400ºF/200ºC.
  • In the same skillet, add the butter and the onions. Cook down until slightly soft, about 3 minutes. Add the apples, bay leaf and the chicken broth. Stir well and cook for about 5 minutes.
  • Add the pork to the skillet, cover and place in the preheated oven for 45 - 50 minutes. Remove from oven and top with fresh parsley.
  • Cut into slices and serve with apples and pan juices poured over the pork.
