  • Difficulty – It’s pretty straightforward. There are two parts to making this dish – starting on the stove top and finishing in the oven. Follow the recipe as written in the recipe card and you shouldn’t have any problems.

Ingredients

  • Pork seasoning – I combined olive oil, brown sugar, thyme, rosemary, black pepper, and salt to make a rub for the pork.
  • Pork tenderloin – A pork tenderloin is a long thin piece of pork that’s quite lean and tender. In cooking is generally stays tender and does not dry out.
  • Butter – This recipe uses butter to cook the onions and apples. It helps add a rich flavour to the sauce.
  • Onion – I used a white onion diced small.
  • Apples – For this recipe, I used golden delicious. They cook beautifully and keep their shape after cooking.
  • Bay leaf – Adding a bay leaf and cooking it down in the broth adds a touch of essential oil taste like eucalyptus.
  • Chicken broth – Chicken broth is a great base for the sauce for the pork tenderloin. It pairs well with the pork and the apples.

NOTE, The full recipe and ingredient list can be found at the end of the post in the recipe card.

Instructions

  1. Make the rub for the pork – In a small bowl combine 2 tablespoons of the olive oil, brown sugar, thyme, rosemary, black pepper and salt. Stir well to combine.
  2. Season and sear the pork – Pat dry the pork with paper towels and coat with the seasoning. Set a heavy bottomed skillet over high heat and add the remaining 1 tablespoon of olive oil. Place the pork in the skillet and sear for about 2 – 3 minutes until golden and then flip over the pork. Sear the other side for another 2 – 3 minutes and remove from heat.
  3. Preheat oven – Preheat oven to 400ºF/200ºC.
  4. Cook the onions and apples – In the same skillet, add the butter and the onions. Cook down until slightly soft, about 3 minutes. Add the apples, bay leaf and the chicken broth. Stir well and cook for about 5 minutes.
  5. Roast the pork – Add the pork to the skillet, cover and place in the preheated oven for 45 – 50 minutes. Remove from oven and top with fresh parsley.
  6. Serve – Cut into slices and serve with apples and pan juices poured over the pork.

Recipe Tips

  • Searing the pork – It’s really important to sear the pork for flavour and to seal the juices in the pork tenderloin.
  • Keep covered in the oven – It’s important to keep the pork covered in the oven so it doesn’t dry out and the juices don’t evaporate.

Substitutions

  • Pork – I used a pork tenderloin which is a great size and cooks fantastically for this recipe. Alternatively you could use a pork loin or a pork shoulder. Keep in mind different cuts of pork may require different cooking times.
  • Chicken broth – You can also use apple juice or apple cider in place of the broth for a slightly sweeter taste.
