Ingredients

  • 1 large bunch fresh green beans ends trimmed and cleaned
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/2 medium onion finely diced
  • 1/3 cup black olives pitted and sliced
  • 1/2 teaspoon salt

Instructions

  • Place the green beans in a colander and pour boiling water over the beans. Immediately place the green beans in a bowl of cold water. Drain the green beans and set aside.
  • Heat olive oil in a large skillet set over medium heat. Add the garlic and give a quick stir until the garlic is fragrant, about one minute. Add the diced onions and stir well. Cook down until golden and soft, about 8 minutes.
  • Add the green beans and give a really good stir. Cook the green beans down until they are tender but still a little crisp. Add the olives and stir well. Cook for about one to two minutes to incorporate the olives completely. Season with salt and remove from heat.
  • Serve as a side dish to any main course.
