Shrimp Pasta with Sun Dried Tomatoes

Ingredients

  • 8 oz spaghetti
  • 1 tablespoon olive oil
  • 1/2 cup sun dried tomatoes finely diced
  • 2 cloves garlic minced
  • 1 tablespoon butter
  • 1 lb shrimp uncooked and cleaned
  • 1 cup cream
  • 1 cup pasta water
  • 1/2 cup parmesan cheese finely grated
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1 tablespoon fresh parsley minced

Instructions

  • Cook spaghetti according to package. Drain and set aside. Reserve one cup of the pasta water.
  • In a large skillet set over medium heat, add the olive oil and sun dried tomatoes. Give a good stir and cook for about 2 minutes. Add the garlic and stir until fragrant, about one minute. Increase heat to high and add the butter and uncooked shrimp. Cook for 3 - 4 minutes or until the shrimp are fully cooked.
  • Reduce heat to medium and add the cooking cream and pasta water. Bring to a simmer and stir well.
  • Add the cooked spaghetti, parmesan cheese, oregano, salt and parsley to the sauce. Stir well to completely combine and remove from heat.
  • Serve topped with extra with parmesn if desired.
