Cook spaghetti according to package. Drain and set aside. Reserve one cup of the pasta water.
In a large skillet set over medium heat, add the olive oil and sun dried tomatoes. Give a good stir and cook for about 2 minutes. Add the garlic and stir until fragrant, about one minute. Increase heat to high and add the butter and uncooked shrimp. Cook for 3 - 4 minutes or until the shrimp are fully cooked.
Reduce heat to medium and add the cooking cream and pasta water. Bring to a simmer and stir well.
Add the cooked spaghetti, parmesan cheese, oregano, salt and parsley to the sauce. Stir well to completely combine and remove from heat.
Serve topped with extra with parmesn if desired.
