Hello friends and happy Friday! It’s been a week and a half and this is the first recipe I’m getting out for all you lovely people. I’ve had a lot of admin work to get done for the Blog and recipes have taken a back seat. With that being said, this recipe is a keeper! I made it just the other day and ate way more than I should have…..lol. If you love creamy pasta dishes, this one is for you. It’s also a little similar to my Sun Dried Tomato Penne Pasta recipe, which is a crowd pleaser every single time. So, let’s have a little look at this dish.

What Is This Shrimp Pasta Dish Like
- Difficulty – This is a pretty easy recipe to make and it’s all done in 30 minutes. Make sure to check out the recipe tips section to make sure to get your dish just right!
- Taste – The sun dried tomatoes add so much flavour to the rich and creamy sauce. And the shrimp are perfectly tender with there natural sweetness.
- Serving – This recipe will make four generous servings. Keep in mind you can change the serving size in the recipe card at the end of the post.

Ingredients
- Pastaย โ I opted for spaghetti which worked really well in this dish.
- Olive oilย โ I used extra virgin olive oil for cooking.
- Garlicย โ Fresh minced garlic will give the best flavour.
- Sun dried tomatoesย โ For best results use sun dried tomatoes packed in oil. They have a huge flavour punch!
- Butter – A small amount of unsalted butter is added to the sauce for a little more flavour and richness.
- Shrimp – I used uncooked frozen shrimp in their shells. I swear by these type of shrimp for the best freshness and taste. If you can buy frozen uncooked shrimp in shells in your supermarket, buy them. They give far more flavour than the pre peeled varieties. I have tried so many, and these type are by far the best.Shrimp
- Creamย โ I used a cooking cream to make the sauce. Although this isnโt an overly creamy sauce, the cooking cream makes a light sauce that is delicious.
- Parmesan cheeseย โ This recipe uses freshly grated parmesan cheese.
- Seasoningsย โ I used dried oregano, salt and black pepper.
- Fresh herbsย โ I added fresh chopped parsley for additional freshness and flavour when the dish was finished.

Instructions
- Cook spaghetti – Cook spaghetti according to package. Drain and set aside. Reserve one cup of the pasta water.
- Cook sun dried tomatoes and shrimp – In a large skillet set over medium heat, add the olive oil and sun dried tomatoes. Give a good stir and cook for about 2 minutes. Add the garlic and stir until fragrant, about one minute. Increase heat to high and add the butter and uncooked shrimp. Cook for 3 – 4 minutes or until the shrimp are fully cooked.
- Make sauce – Reduce heat to medium and add the cooking cream and pasta water. Bring to a simmer and stir well.
- Finish dish – Add the cooked spaghetti, parmesan cheese, oregano, salt and parsley to the sauce. Stir well to completely combine and remove from heat.
- Serve – Serve topped with extra with parmesn if desired.









Recipe Tips
- Cooking times โ This dish comes together pretty quickly. Itโs best to cook the pasta while you are making the sauce so they are both ready at the same time.
- Reserve pasta water โ This is really important for the sauce, so donโt forget to save about a cup of pasta water before draining the pasta. The pasta water helps make the sauce.
- Type of sun dried tomatoes โ The best type of sun dried tomatoes to use in this recipe are the ones that are packed in oil. They give so much flavour.

Substitutions
- Pastaย โ I used spaghetti for this recipe. Alternatively, you could useย pasta spirals,ย penneย orย rotini.
- Sun dried tomatoesย โ This recipes used sun dried tomatoes packed in oil as this gives the best flavour. You could use dry sun dried tomatoes. Just keep in mind, these need to be soaked before using.
- Fresh parsleyย โ I love the freshness of parsley, but basil would work great for this recipe.

Serving

Ingredients
- 8 oz spaghetti
- 1 tablespoon olive oil
- 1/2 cup sun dried tomatoes finely diced
