Slow Roasted Cherry Tomatoes are easy to make, full of flavour and a great addition to pasta, rice, bruschetta and so much more. These are slowly roasted with just olive oil and sea salt and are a great way to use up seasonal produce.
Preheat oven to 275 degrees F/135 degrees C and have ready a large baking tray. You can line the tray or leave it as it is if you like.
Arrange the tomatoes on the tray. Drizzle over the olive oil and sprinkle over the sea salt. Stir to combine completely.
Place in the oven and roast for about 2 hours or until the tomatoes are soft and bursting. Remove from oven and serve with pasta, on bread or however you would like to enjoy them.
