Slow Roasted Cherry Tomatoes

Slow Roasted Cherry Tomatoes are easy to make, full of flavour and a great addition to pasta, rice, bruschetta and so much more. These are slowly roasted with just olive oil and sea salt and are a great way to use up seasonal produce.

Ingredients

  • 3 cups cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon coarse sea salt

Instructions

  • Preheat oven to 275 degrees F/135 degrees C and have ready a large baking tray. You can line the tray or leave it as it is if you like.
  • Arrange the tomatoes on the tray. Drizzle over the olive oil and sprinkle over the sea salt. Stir to combine completely.
  • Place in the oven and roast for about 2 hours or until the tomatoes are soft and bursting. Remove from oven and serve with pasta, on bread or however you would like to enjoy them.
