Slow Roasted Cherry Tomatoes

Slow Roasted Cherry Tomatoes are easy to make, full of flavour and a great addition to pasta, rice, bruschetta and so much more. These are slowly roasted with just olive oil and sea salt and are a great way to use up seasonal produce.

If you have never slow roasted little tomatoes, now is your chance. Honestly, I make these all the time through the summer months and add them to so many dishes. My personal favourite is adding them to Mediterranean Bruschetta. But honestly, you can choose to serve these alongside a tapas board with Hummus, olives, cheese and ham for a wonderful Friday evening spread!

What is This Cherry Tomato Recipe Like

  • Difficulty – This recipe is really easy, uses only 3 ingredients and takes about 5 minutes to prepare.
  • Taste – These tomatoes have a sweet roasted flavour. They are soft and slightly charred from being roasted.
  • Serving – The serving size of these tomatoes depends on what you are using them for. There are enough here to add to a pasta dish for 4 – 6 servings easily. And as a tapas selection, it would serve around 6 people with bread.

Ingredients

  • Tomatoes – I used small ripe cherry/grape tomatoes for this recipe.
  • Olive oil – Good quality olive oil works best for flavour for the cherry tomatoes.
  • Salt – This recipe uses coarse sea salt.

Instructions

  1. Preheat oven – Preheat oven to 275 degrees F/135 degrees C and have ready a large baking tray. You can line the tray or leave it as it is if you like.
  2. Arrange on a baking tray – Arrange the tomatoes on the tray. Drizzle over the olive oil and sprinkle over the sea salt. Stir to combine completely.
  3. Roast – Place in the oven and roast for about 2 hours or until the tomatoes are soft and bursting. Remove from oven and serve with pasta, on bread or however you would like to enjoy them.

Recipe Tips

  • Use good quality ingredients – As this dish is so simple, make sure to use really good ripe tomatoes. And don’t skip on the extra virgin olive oil or the sea salt. It really does make all the difference with the flavour.
  • Check roasting time – My tomatoes were perfect after two hours. But remember all ovens cook a little differently, so check on them before this to ensure they are not overcooking. If overcooked, they will dry out.

Substitutions

This recipe only uses three high quality ingredients. I really don’t recommend changing anything at all for best results. However, after they are cooked you could add a little balsamic for a boost of extra flavour.

Serving

Serve these in pasta dishes, with Homemade Baguette Bread, alongside meats, with a Charcuterie Board, mix them into salads or soups and so much more.

Although cherry tomatoes and grape tomatoes are similar, they are not the same. They are both small sweet tomato varieties. Cherry tomatoes are small and round like a cherry. Grape tomatoes are small and the shape of a grape.
