Lay the tomato slices on paper towels and sprinkle with salt. Pat dry with another paper towel on top to reduce the moisture in the tomatoes. Set aside.
Set a medium sized skillet over medium heat on the stove top.
Lay out the bread and spread the mayonnaise over each slice of bread on one side. Place two slices of bread in the skillet, mayonnaise side down. Top each slice of bread with a slice of cheddar, tomato slices, shredded mozzarella and the other slice of cheddar. Top with other slice of bread with the mayonnaise side on the outside.
Gently press down each sandwich with a spatula. Cook for about 5 minutes and then flip over the sandwiches. Cook the other side for about 5 more minutes until golden and crispy.
Remove from heat and serve immediately.
