Tomato Grilled Cheese Sandwich

If I had to have only one sandwich for the rest of my life, it would have to be the Grilled Cheese! This sandwich has been around since everyone’s’ childhood and I haven’t met one person that doesn’t love them. Unless that’s you…lol. They are easy to make and they feel kind of luxurious with the melted cheese and the crispy bread.

So, all I’ve done here is add some sliced tomatoes and a little shredded mozzarella. It’s not much of a recipe, but it’s delicious and makes for a great lunch. And sometimes we’re just really busy and we need reminders and easy food is delicious too. Enjoy friends!

What Is This Sandwich Recipe Like

  • Difficulty – This is super easy, requires six ingredients and takes about 10 minutes.
  • Taste – The ultimate grilled cheese flavour with a twist with the mayonnaise and tomato slices.
  • Serving – This recipe makes two sandwiches. You can easily adjust the serving size in the recipe card at the end of the post.

Ingredients

  • Tomato – I used a large salad tomato for this recipe. I was able to get about 6 slices of tomatoes for the sandwiches. You may need two tomatoes, if your tomatoes are smaller.
  • Salt – I used a little salt to sprinkle over the tomatoes. This helps with reducing the moisture in the tomatoes as well as adding flavour.
  • Bread – Use a good quality while sandwich loaf. A heavy bread is best because it will keep the sandwich together.
  • Mayonnaise – Instead of the typical butter, I spread mayonnaise over the bread for a unique flavour.
  • Cheese – I opted for two kinds of cheese for these sandwiches. I used sliced cheddar as well as shredded mozzarella.

Instructions

  1. Salt tomatoes – Lay the tomato slices on paper towels and sprinkle with salt. Pat dry with another paper towel on top to reduce the moisture in the tomatoes. Set aside.
  2. Heat a skillet – Set a medium sized skillet over medium heat on the stove top.
  3. Prepare sandwiches – Lay out the bread and spread the mayonnaise over each slice of bread on one side. Place two slices of bread in the skillet, mayonnaise side down. Top each slice of bread with a slice of cheddar, tomato slices, shredded mozzarella and the other slice of cheddar. Top with other slice of bread with the mayonnaise side on the outside.
  4. Cook sandwiches – Gently press down each sandwich with a spatula. Cook for about 5 minutes and then flip over the sandwiches. Cook the other side for about 5 more minutes until golden and crispy.
  5. Serve – Remove from heat and serve immediately.

Recipe Tips

  • Use a good quality white sandwich bread – The bread is the most important part of the sandwich, so get a good white loaf. You can even use a homemade one if you are into bread making.
  • Salt and pat dry the tomatoes – To make sure you don’t end up with a soggy sandwich, make sure to salt and pat dry the tomatoes. This will not only add flavour to the sandwich, it will eliminate most of the water from the tomatoes.
  • Serve fresh – Grilled cheese really needs to be served as soon as it’s cooked. The bread will the crisp and the cheese will be perfect. So time the cooking just as you’re ready to eat.

Substitutions

  • White sandwich bread – You could use a white sourdough or ciabatta bread for grilled cheese if you like.
  • Cheese – You can easily use American cheese (the orange sliced cheese that is usually plastic wrapped). I know many people love this cheese and it does work fantastic for grilled cheese sandwiches.
  • Herbs – If you want to elevate the flavour even more, you can add fresh basil to the sandwich with the tomato slices.
