Cheesy Barbecue Chicken Sliders

Here’s your new summer sandwich! You’re going to want to make these Cheesy Barbecue Chicken Sliders all summer long. Tender pieces of shredded chicken in barbecue sauce topped with sharp cheddar cheese and sandwiched between a soft and sweet Hawaiian Dinner Roll. Make them for you next party night in or even weekday lunch.

And here’s the grand reveal, ta-da! Yes, it’s a chicken slider sandwich and I know that might not be very original, but they are delicious. If you’ve been following along through the last few posts, you knew something was coming today!

I recently posted recipes for both an Oven Roasted Rotisserie Chicken and Homemade Hawaiian Dinner Rolls. And I said those two recipes were going to be used in the final recipe. I’m sure most of you figured out it was going to be a sandwich of sorts. And can I just say, these were delicious.

Inspired by my 15 year old who watched a 2 minute video on Instagram and said, “Mom, can you make these?”. Why yes, yes I can!

The Ingredients

Just four ingredients to put together these delicious little summer sliders.

Okay, I want to point out that this particular recipe is linking to the chicken and the dinner rolls. You can just as easily buy those products at your local deli or supermarket to make life easy. Of, if you want to be crazy like me, make them yourself.

Again, I’d like to stress that the cooking and prep time for this particular recipe is using an already cooked chicken and rolls that are either store bought or previously baked. Good, we got that cleared up…haha!

Let’s Make Some Sliders

This is so easy, it doesn’t require a whole lot of instructions, but here we go anyways.

Shred part your chicken and discard the bones and the skin. I like to use a mix of the dark and light meat for these sandwiches as it gives a great flavour. So, I basically shredded the entire chicken. While eating some, of course…haha.

Add the barbecue sauce to the chicken and stir well.

Putting the Cheesy Barbecue Chicken Sliders Together

Preheat oven to 350 degrees F/180 C. Have ready a large baking tray.

Pictured here, you will just see 8 sliders, but a whole chicken will make enough for between 12 – 15 sliders. The recipe below is written out for 12 sliders.

Slice open your sliders and place the bottom half on your baking tray. Push them all together so they are touching. Spoon over the chicken.

Top with Cheese

You can use whatever kind of cheese you prefer, we like sharp cheddar. I buy it in a block and grate it. But the pre grated stuff is just fine. So, sprinkle over the cheese.

Top Them Off

Place the top part of the roll on top and gently push them all down to hold in place. Cover with foil and bake for about 10 minutes or until the cheese has melted.

It’s important to cover in foil, otherwise the bread will dry out and hard. We want them soft.

Fresh from the oven and ready to serve and enjoy! We absolutely loved these and will be making them again really soon.

This was my first time ever making a mini slider! I know, what? They just aren’t a big thing here in Spain and you can’t buy these types of rolls. So, it’s not something that ever came to my mind to make. That is until Oliver, brought it to my attention last week that he saw something that looked delicious. I never ever saw the video but he said these looked just as good. Happy mom!

Can I use Store Bought Chicken and Rolls

Yes! Absolutely, you really can. Of course, there’s a lot of satisfaction in making everything from scratch, but we don’t always have that kind of time on our hands. I’m as busy as the next person, and many days convenience takes over from scratch cooking!

So, buy a deli chicken. They are always great. I do by them from time to time in the summer and we all love them. And if you live where you can get your hands on Hawaiian Rolls, buy those as well. And even the barbecue sauce you can buy. So, they make a super easy summer food that you can serve at parties, lunches, picnics, beach days out…the list goes on.

How do I make them completely from Scratch

Well, the good news is all of the recipes are on my blog for the chicken, rolls and even barbecue sauce. If you we’re planning to go down the from scratch route, I’d recommend making things in advance. The barbecue sauce keeps for up to two weeks in the fridge! The chicken can even be made the day before. The rolls have to be fresh though. The thing about homemade bread is it needs to be fresh. Because it has no preservatives, they will dry out after a day.

Make these Cheesy Barbecue Chicken Sliders and enjoy them like we did! We just served them with shredded iceberg lettuce to freshen the up a bit. With a cold glass of ice tea on the side, it was prefect.

Ingredients

  • 1 whole rotisserie chicken skin removed and breast and thighs shredded
  • 12 dinner rolls
  • 1 1/2 cups barbecue sauce
  • 2 cups cheddar cheese shredded

Instructions

  • Preheat oven to 350 degrees F/180 C.
  • Place the shredded chicken in a large bowl and combine the barbecue sauce. Stir to combine.
  • Slice open the rolls and place the bottoms on a baking tray. Place them all together. Top with shredded chicken, cheese and top part of the roll. Gently press them down with your hands.
  • Cover with foil and bake for 10 minutes or until cheese has melted.
  • Remove from oven and serve immediately.
