Ingredients
2lbschicken thighs
1cupGreek yogurt
juice of 1/2 a lemon
2tablespoonsolive oil
2cloves garlicminced
1teaspoonsweet paprika
1teaspooncumin
1teaspooncoriander
1teaspoonsalt
1/2teaspoonblack pepper
small bunch of fresh parsleyfinely chopped (approximately 2 tablespoons)
Instructions
Pat dry the chicken thighs with paper towels and set aside.
In a large bowl combine the Greek yogurt, lemon juice, olive oil, garlic, sweet paprika, cumin, coriander, salt, black pepper and parsley. Stir really well to combine.
Add the chicken to the marinade and stir well to coat all of the chicken pieces. Cover and refrigerate for two hours up to overnight.
Preheat oven to 350ºF/180ºC. Place the chicken on a large baking tray shaking off any excess marinade. Bake for about 35 - 40 minutes until the chicken is fully cooked and golden. Place the oven rack at the highest setting and put the chicken under the broiler for 5 minutes to get it really golden.
Remove from oven and allow to rest for 5 minutes before serving.
