This Yogurt Marinated Chicken is so tender and flavourful that you’ll want to make it on repeat. Chicken thighs marinated in Greek yogurt, olive oil. lemon and spices. Then it’s just baked in the oven until golden and tender. Delicious!

If you make one Chicken recipe this week, make this one! I don’t often say that about many recipes, but this one is so delicious. If you’ve been around here for any time at all, you’ll know I make a lot of chicken recipes. They are easy to cook, affordable, so versatile and everyone loves chicken. This recipe did not disappoint on the flavour front after marinating in a seasoned yogurt for a few hours. We served it up with Lemon Basil Couscous and it was divine.

What’s This Chicken Dish Like

  • Difficulty – I’d rate this recipe very easy. You make a marinade for the chicken and then just bake it in the oven. By following the easy recipe in the recipe card you should achieve the same results.
  • Taste – This chicken is tender and flavourful with a hint of cumin and coriander spices.
  • Serving – This recipe makes between 4 – 6 servings. I used smallish chicken thighs and it was able to comfortably serve 4 adults with side dishes.

Ingredients

  • Chicken – I used small bone in chicken thighs with the skin removed.
  • Yogurt – This recipe used unsweetened Greek yogurt.
  • Lemon juice – You can use either fresh lemon juice or from a bottle. The acid in the lemon helps keep the chicken tender.
  • Olive oil – I used extra virgin olive oil.
  • Garlic – Fresh minced garlic adds a punch to the marinade.
  • Seasonings and spices – I used a combination of sweet paprika, cumin, coriander, salt and black pepper.
  • Fresh herbs – I added a bunch of fresh minced parsley to the marinade for extra flavour.

Instructions

  1. Pat the chicken dry – Pat dry the chicken thighs with paper towels and set aside.
  2. Make marinade – In a large bowl combine the Greek yogurt, lemon juice, olive oil, garlic, sweet paprika, cumin, coriander, salt, black pepper and parsley. Stir really well to combine.
  3. Marinade chicken – Add the chicken to the marinade and stir well to coat all of the chicken pieces. Cover and refrigerate for two hours up to overnight.
  4. Cook chicken – Preheat oven to 350ºF/180ºC. Place the chicken on a large baking tray shaking off any excess marinade. Bake for about 35 – 40 minutes until the chicken is fully cooked and golden. Place the oven rack at the highest setting and put the chicken under the broiler for 5 minutes to get it really golden.
  5. Serve – Remove from oven and allow to rest for 5 minutes before serving.

Recipe Tips

  • Pat the chicken dry – Don’t skip this step or the marinade won’t stick easily.
  • Thaw chicken correctly – If using frozen chicken from the freezer, make sure you have allow them to defrost properly before baking.
  • Allow for marinade time – This chicken really does need to marinade for a few hours for best results. So please don’t skip the marinade time.

Substitutions

  • Seasoning – If you want to change the seasoning for this chicken recipe, it’s really easy. You could choose to use Homemade Cajun SeasoningMoroccan Spice SeasoningHomemade Mild Taco Seasoning or any of your other favourite seasonings.
  • Chicken thighs – I used bone in, skinless chicken thighs for this recipe. You can choose to leave the skin on if you prefer. You could also use boneless chicken thighs. If you prefer to use chicken breast, you can. Just keep in mind, chicken breast is drier than chicken thighs.
