Make this Chopped Summer Salad the next time you’re serving up a barbecue. Put together in minutes to make for easy summer eating.
Quite often around here, salads are put together with what ever is on hand. Yesterday, when getting the barbecue ready for lunch, this salad was what came out of our list of fresh ingredients. It has become a basic staple that changes almost every time I make it. I served it yesterday with the honey mustard vinaigrette that we all love so much.
Use what you have on hand. You don’t have to stick to what’s here in this salad. Sometimes, the best dishes are created in a hurry and what we have on hand. I’m not saying this salad is a winning any stars, but it sure was tasty and it hit the spot on a hot day alongside a barbecue.
I used a honey mustard dressing for this salad, but use what you like! You could just go for basic vinaigrette or even something creamy. Enjoy friends, and get the most out of the freshness of summer cooking!

Chopped Summer Salad
Ingredients
For the salad:
- 1/2 head ice berg lettuce cut into strips
- 1 Tomato Diced into large pieces
- 1/2 Red pepper cut into strips
- 1/2 Onion finely sliced
- 1 avocado cut into 1 inch pieces
- 1/2 Cup green olives pitted
- 1/4 cup goats cheese cut into cubes or sliced into shavings
For the Vinaigrette:
- 2 tablespoons olive oil
- 2 tablespoons vinegar
- 1 tablespoon honey
- 1 teaspoon mustard
- Salt and pepper
Instructions
- First, make your vinaigrette. Combine all the ingredients in a small jar and shake really well. Set aside.
- For the salad, toss the lettuce in a large salad bowl, top with peppers, onions, tomato, avocado, olives and cheese. Drizzle over vinaigrette when ready to serve. A fresh summer salad!
