Why not add this Ginger & Citrus Glazed Turkey to your meal plan. A great skillet dinner that’s all done in under 30 minutes!
A while ago, a friend suggested I have an Express section on my blog. In theory it is a wonderful idea and I have been trawling through my recipes to see what is quick or quickish.
I see lots of recipes posted at “Under 10 Minutes”, “Dinner in 20 Minutes” and so on. Then I dwell further into the reading only to find that many of the recipes are using convenience items, leftovers, or previously prepared ingredients. So, I don’t really consider that the entire cooking time. I have tried it many times and always seem to fail to achieve the time stated. Maybe I just work slow, who knows. In any case, I love the idea of quick dinners but I also like to cook from scratch. So, somewhere there has to be a comprise. For me that comprise is Meals in 30 Minutes. I think this is doable for many meals and most people can spare 1/2 hour if they are going to set off in the kitchen to cook supper.
Sometime this week, I am going to start a Meals in 30 Minutes section. So check back in a few days! This can be the kick off recipe as I made it yesterday and it was honestly under 30 minutes. It is tasty, healthy and quick.

Ginger & Citrus Glazed Turkey
Ingredients
- 1 lb turkey fillets
- Juice of two oranges (fresh is much better)
- 1/2 Cup water plus 1 tablespoon extra water
- 3 Tablespoons corn flour
- 2 Tablespoons olive oil
- 1 inch piece ginger grated
- 2 cloves Garlic crushed
- Small bunch of fresh chopped chives
- Salt to season
Instructions
- Spoon two tablespoons of the corn flour onto a plate. Dredge the turkey fillets in the corn flour and set aside. Heat the olive oil in a large skillet. Add the turkey and brown each side for just about 2 minutes per side. Remove from pan and keep warm.
- In the reserved skillet set over medium heat, add the garlic, ginger and orange juice. Whisk for about 1 minute. Mix the extra tablespoon of water and corn flour together and add to pan. Continue to whisk until you have a smooth and thickened sauce. Gradually add the water whisking as you go. You should have a smooth, slightly thickened and glossy sauce. Reduce heat to low, return turkey to pan, season with salt and cover. Leave to finish cooking for about 8-10 minutes. Remove from heat, sprinkle with fresh chives and serve with rice.
