Honey Bran Muffins

Why not have a muffin without all the guilt. These Honey Bran Muffins make a great alternative to breakfast or a mid morning snack. They are packed full of bran which make them high in fiber. And they have a little touch of honey for sweet goodness!

Age old bran muffins.  Nothing much new to report here as I am sure we have all made them and eaten them at one point or another.  I haven’t made them in, oh, something like 15 or more years.  This morning when I was itching to bake something, these are what came to mind. 

Honey Bran Muffins

  • I used part brown sugar and part honey. What a difference in a really tasty way! The honey brings so much flavour to the muffin and if most definitely shines through in the taste. So, next time you are planning to give the bran muffins a miss, don’t! They are really fluffy, sweet and just plain ol’ delicious. Even better with butter I might add.
  • I used whole wheat in this recipe, but you could just as easily use plain flour if it is what you have on hand or prefer.
  • If you don’t have buttermilk, just add a squeeze of lemon juice or a splash of vinegar to your milk to make it sour.  Stir and let it sit for a few minutes, voilร ,, buttermilk!

Great breakfast muffins because they are healthy right?  Okay, I am going with the fact that they have bran and whole wheat, so they must be good for you.  I might just know the complete difference, but I am still enjoying them and calling them my healthy breakfast muffin.

Ingredients

  • 1/3 Cup butter
  • 1/3 Cup honey
  • 1/4 Cup brown sugar
  • 1 Egg
  • 1 Cup buttermilk
  • 1 Cup wheat bran
  • 1 Cup whole wheat flour
  • 2 Teaspoons baking powder
  • 1/2 Teaspoon salt

Instructions

  • Preheat oven to 350 degrees F. Grease 12 muffin pans and set aside.
  • Whisk together the flour, baking powder and salt and set aside.
  • Add the bran to the milk and set aside.
  • In the bowl of you electric mixer, beat the butter and brown sugar on high speed for about 3 minutes. Add the egg and the honey and continue to mix for another 2 minutes. Add the flour mixture and mix on a low speed until combine. Add the bran mixture and stir until just combined.
  • Pour evenly into prepared muffin tins. Bake for 15 – 20 minutes. Muffins will be done with a toothpick inserted into the center comes out clean. Remove from oven and cool on a wire rack.
