Why not freshen things up for spring with this Mango & Avocado Spring Salad with a Honey Lime Dressing Perfectly fresh and delicious.
I got spring on my mind today. Probably because it’s just around the corner and I can almost smell it in the air. I am ready to break out the barbecue, capri pants and margaritas!
All that being said, I thought a light & fresh salad would be nice today. I say this when I put salads on the blog, as I don’t overly view many of them as recipes, but more as ideas. Sometimes, we are not sure what to put into a salad, which I why I like to just try anything I can find and hope for the best. I find, what really makes a salad is the dressing. Well, maybe a few other key components. But if you have a basic lettuce based salad, it is all about the dressing. The dressing on this salad is a honey lime dressing and it is delicious.
Notes About The Mango & Avocado Spring Salad with a Honey Lime Dressing
- Make sure you use ripe avocados and mangoes in this salad as they are the main stars.
- The dressing can be made in advance and then dressed just before serving.
This salad would make a great lunch or as an appetizer to a bigger spring time meal.

Mango & Avocado Spring Salad
Ingredients
For the Salad:
- 1 Avocado
- 1/2 Mango
- 1/4 Cup cashew nuts
- 2 Tablespoons pumpkin seeds
- 2 Cups lettuce leaves your choice
For the Dressing:
- 2 Tablespoons honey
- 1 Tablespoon olive oil
- Juice of one lime
- Zest of one lime
- 1 clove Garlic crushed
- Pinch salt
Instructions
- In a small bowl combine your honey, olive oil, lime juice, lime zest, garlic and salt. Stir well and set aside.
- Cut your avocado in half, remove stone and cut into slices length ways. Cut your mango into bite size pieces.
- In a salad bowl, toss in the lettuce, avocado, pumpkin seeds and cashew nuts. Drizzle over the dressing, give a good toss and serve immediately.
