Dinner done in a hurry with this Quick Teriyaki Vegetable Stir Fry. Full of flavour, wholesome, quick and delicious. If you got 5 minutes to chop a few things and 10 or so more minutes to cook you got dinner done!
Right, so how many of us can get dinner on the table in 15 minutes? I would say a show of hands right about now is hitting close to zero. I know I struggle with the meals in minutes idea. It just doesn’t work for me. I guess I struggle with all the chaos with trying to create a from scratch meal in minutes. Throw in a few pets, a couple of teenagers, possibly power tools laying around, unexpected messes and I just can’t manage 15 minutes. However, take all that away and give me 100% concentration and focus. Yes, I can do it. Basic, but it has happened.
So here is the real question. Can it be done?
Yes, a From Scratch Dinner Can be Done in 15 Minutes
Yes, it can! Even people like me can sometimes manage a from scratch meal in minutes. It doesn’t happen often, but it does happen. Case in point, this stir fry. Literally from the time I had the stuff on the counter to the plate it was 15 minutes! That is a huge win by anybody’s books.
The pets were outside, kids at school, husband at work and no unexpected messes. So, this was a from scratch cooked lunch in 15 minutes. I say again, a big win for me.
How Can We Get Dinner On The Table In a Hurry
Next question, how can we manage it?
- Stay focused and get organized.
- Decide what you are making. Get everything you need assembled in one place. Even the graters, peelers, pots, pans, whatever you need. Get it all out and on counter in front of you. But really, organization is key is getting meals out in a hurry.
As for this stir fry, it was quick, easy and really delicious. It is so basic as you will see in the recipe below but didn’t lack in the flavour or the freshness. This was literally a meal cooked with what I had on hand, which is how many meals happen in this house. So, use what vegetables you have. Don’t feel you have to always be limited to the exact ingredients you see in a dish. There is that word substitution again, ha!

Quick Teriyaki Vegetable Stir Fry
Ingredients
- 2 Italiangreen peppers thinly sliced
- 6 Baby onions peeled and quartered
- 1 Cup sugar snap peas
- 10 baby corn pieces cut in thirds
- 1 Hot chili finely diced
- 2 Cloves garlic minced
- 1/2 Inch piece of fresh ginger grated
- 1 Tablespoon sesame seeds
- 1 Tablespoon sesame oil
- 1/4 Cup Teriyaki sauce
- 1/2 Cup basmati rice
- Fresh coriander to serve
Instructions
- In a medium saucepan, add rice to 1 Cup of boiling water. Reduce heat to low, cover and leave to cook for about 10 minutes.
- In a wok, add the sesame oil, chilies, garlic and ginger. Stir for a minute. Add all the vegetables and toss around for about 8-10 minutes. Add teriyaki sauce and give a good stir. Sprinkle over sesame seeds and remove from heat.
- Serve immediately with the rice and top with fresh coriander.
