Nothing says spring like this Easy Rotisserie Chicken Salad. This salad is made with a rotisserie chicken, some chopped vegetables, nuts and a mayonnaise based sauce. Serve it with fresh baguette bread or lettuce hearts!

Whatโs This Salad Like
- Difficulty โ This is such an easy salad to put together. It uses a store bought deli chicken and all you have to do is make the dressing and chop some vegetables. It does require chill time for about one hour.
- Taste โ A classic summer chicken salad. Although it has a mayonnaise base, it isnโt overpowering at all. The celery really shines through in this recipe as well as the cashews. Subtle flavours and a great texture.
- Serving โ This is great to serve at a party or bring to a potluck. It can serve about 8 people easily.
Ingredients
- Chicken โ I used a store bought rotisserie chicken for this recipe.
- Salad dressing โ This dressing is made using mayonnaise, Dijon mustard, white wine vinegar, lemon juice, dried sage, garlic powder, onion powder, salt, pepper and finely chopped parsley.
- Vegetables โ I added white onion, red onion, celery and carrots to this salad.
- Nuts โ I added chopped cashews to the recipe for texture and additional flavour.

Instructions
- Make the salad dressing โ Make the salad dressing. In a medium bowl combine the mayonnaise, mustard, vinegar, lemon juice, sage, garlic powder, onion powder, salt, pepper and finely chopped parsley. Whisk well to combine and set aside.
- Combine salad ingredients โ In a large bowl combine the chicken, onions, celery and carrots. Stir well to combine.
- Toss the salad and refrigerate โ Pour the dressing over the salad and toss really well to completely coat the entire salad. Wrap and refrigerate for one hour.
- Finish and serve โ Remove from fridge and add the cashew nuts. Toss to combine and serve.
Notes About The Salad
- Shredding the chicken โ Make sure to get rid of all the skin, bones and fatty bits of the chicken. The chicken should shred apart easily or alternatively you can cut it into small pieces.
- Make in advance โ If you are planning a party or potluck, you can make this the day before and keep it covered in the fridge.
- Serving โ If serving on lettuce leaves or on baguette bread, donโt top until just before serving as it will go soggy.
- Keep chilled โ As this is a mayonnaise based sauce, itโs best not to keep it in the heat too long. So, donโt keep it out in the heat for longer than about one hour.
Subsitutions
- Deli chicken โ I make things easy by buying a deli rotisserie chicken. You could make your own Oven Roasted Rotisserie Chicken, a Spatchcock Chicken or use any kind of leftover chicken.
- Onions โ I used a mix of red onions and white onions. You could try any other variety of onions like brown onions or spring onions.
- Fresh parsley โ Swap for fresh chives, fresh basil or even mint for a unique flavour.
- Cashew nuts โ Try almonds, pecans, walnuts, pine nuts or leave them out of you prefer.
Serving Suggestions
- Bread โ Serve this chicken salad on Baguette Bread or in sandwiches.
- Pita โ Serve it in pita breads with shredded lettuce and chopped tomato.
- Crackers โ Would be great served with any kind of crackers.
- Lettuce cups โ This is great served in any kind of small lettuce leaves like endive cups, butter lettuce or romaine lettuce.
- Wrap โ Fill wraps and roll them up.
- Cucumber slices – Spoon the salad onto large cucumber slices.
Frequently Asked Questions
You an keep a mayonnaise salad at room temperature for about two hours. If you have it outside in warmer temperatures, it will need to be refrigerated after about one hour.
You can safely keep a chicken salad with mayonnaise in the fridge up to 3 โ 4 days. Although it wonโt be as fresh as the first day, it will still be safe to eat.

Ingredients
- 1 whole rotisserie chicken skin and bones removed and chicken shredded

- 1/2 small red onion finely diced
- 1/2 small white onion finely diced
- 2 celery ribs cut into thin slices
- 1 carrot peeled and finely diced
- Small bunch of fresh chopped parsley roughly chopped
- 1/2 Cup cashew nuts roughly chopped
