Sesame Crusted Turkey Medallion Stir Fry

Sesame Crusted Turkey Medallion Stir Fry

Sesame Crusted Turkey Medallion Stir Fry

Ingredients

  • Turkey – I used turkey medallions but you could use a turkey tenderloin and cut it up
  • Fresh – red pepper, yellow pepper, green pepper, white onion, fresh coriander, spring onions, garlic and ginger
  • Eggs – 1 egg
  • Seasonings and flavours – soy sauce, sesame seeds, onion powder, garlic powder, dried chilies, salt and pepper
  • Pantry ingredients – dry bread crumbs and basmati rice
  • Oils – sesame oil

Sesame Crusted Turkey Medallion Stir Fry

Instructions

  1. Cook rice according to package and set aside.
  2. On a large plate, combine the bread crumbs, sesame seeds (reserving a few for garnish), coriander, onion powder, garlic powder, 1/2 of the chopped chillies, salt and pepper. Mix well.
  3. Dip the turkey pieces in the egg and then the bread crumb mixture. Repeat for all turkey and set aside.
  4. In a large wok, add about 1 tablespoon of the sesame oil with the garlic, ginger and remaining chilies. Stir for about a minute and add the vegetables and onions. Toss around for about 5-8 minutes until just getting soft. Add soy sauce and spring onion. Stir for just a minute and remove from heat.
  5. In a large deep sided skillet set over medium heat, add the remaining sesame oil until hot but not smoking. Fry the turkey on each side for about 2 minutes or until golden. Repeat for all turkey, remove from heat and drain on paper towels.
  6. Serve the vegetables on top of the rice and then topped off with the crispy turkey. May garnish with extra coriander, sesame seeds and spring onion if desired. As well, extra soy sauce if desired.

Notes about the stir fry

  • When you look at the ingredient list below, don’t be put off.  Quite often stir fry dishes contain a lot of ingredients but they are real easy.  That is the case for this dish.  And remember, before you start, have all of your ingredients and cooking utensils ready to go.  It saves so much time and usually frustration as well…ha!
  • Okay, I used turkey medallions because I found them in the supermarket.  You could just as easily use turkey strips as it will cook the same way.  When cooking the turkey, make sure oil isn’t smoking.  Otherwise, you will burn them on the outside and they will be greasy.  Not what you are looking for.  Probably test one out before you add a whole batch to the pan.  I found a medium heat worked perfect.  The best time to cook the turkey, is when you have the vegetables already cooking as it will be ready at the same time.
  • When this dish was done, I drizzled a little extra soy sauce over the final plating and topped it with a few garnishes.  Again, this is all optional but I thought the extra soy sauce was pretty good.

Ingredients

  • 1 lb Turkey medallions
