With strawberries plentiful around here the moment, I always have them on hand. The other day I whipped up this super easy and tasty Strawberry Snacking Cake. A great one to keep in mind when time is not on your side and you’re looking for something fresh and seasonal much like the Strawberry Almond Muffins.
If you love a super easy cake recipe, make this one! It was honestly, so easy, so tasty and so fresh! We all enjoyed it and I served it with fresh whipped cream on the side for extra deliciousness.
Ingredients
- Dry ingredients – granulated white sugar, plain flour, baking powder, salt
- Dairy and eggs – eggs, Greek yogurt
- Fresh – strawberries
- Flavours – vanilla extract

Instructions
- Preheat oven and prepare pan – Preheat oven to 350 degrees F. Grease and line an 8 x 6 inch baking dish. Set aside.
- Combine dry ingredients – In a medium bowl, combine the flour (reserving one tablespoon), baking powder and salt. Set aside.
- Mix butter and sugar – In the bowl of your electric mixer, beat the butter on high till smooth. Add the sugar and mix for 2-3 minutes or until light and fluffy. Add eggs one at a time, beating well after each addition. Whisk in vanilla.
- Combine batter – Add half of the flour mixture and stir to combine. Stir in yogurt and then remaining flour.
- Add strawberries – In a medium bowl add the tablespoon of remaining flour to the strawberries and stir to coat. Fold the strawberries into the batter.
- Bake cake Pour batter into prepared baking dish and bake for 18 – 20 minutes or until toothpick inserted comes out with just a few crumbs.
- Allow to cool – Place on a wire rack to cool. Remove from pan when cooled and cut into squares.
Notes about the cake
- Dust the berries in flour – Before I add fruit to any batter, I coat it in a little flour. This will help it from dropping to the bottom of your cake. If you have ever had this problem in the past, this trick should work a treat. I only used a tablespoon of extra flour for this recipe, and it worked wonders. So give it a try.
- Don’t over mix the batter – A common mistake made in adding flour to cakes, is over mixing. This often results in a dense cake. You just want to add the flour until it’s combined.
- How to serve the cake – You could serve the cake just like this, or dress it up with icing, whipped cream, ice cream, yogurt, and whatever else you can think of.
