Notes about the cake

  • Dust the berries in flour – Before I add fruit to any batter, I coat it in a little flour.  This will help it from dropping to the bottom of your cake.  If you have ever had this problem in the past, this trick should work a treat.  I only used a tablespoon of extra flour for this recipe, and it worked wonders.  So give it a try.
  • Don’t over mix the batter – A common mistake made in adding flour to cakes, is over mixing. This often results in a dense cake. You just want to add the flour until it’s combined.
  • How to serve the cake – You could serve the cake just like this, or dress it up with icing, whipped cream, ice cream, yogurt, and whatever else you can think of.
