Tostada con Tomate (Toast with Tomatoes) sums up Spanish breakfast. So simple and so good. Tomatoes on toast have never tasted so good!
We’ve all heard of avocado on toast, right? And if I’m honest, I just don’t get all the rage. I mean come on people, it’s avocado on toast! Why not butter on toast. Jam on toast. Honey on toast. Nope, the avocado wins every single time and I will never ever understand it….hahaha
But Tomato on toast, that’s a whole other story.
Tostada con Tomate or Toast with Tomato is a very traditional breakfast here in Andalucia. Moving over here a million years ago, I thought it quite a strange breakfast. However, I learned quite quickly to love the subtle flavours of these little bites. Quite often it would be served with ham. Not just any ham but Jamon Iberico. Not a flavour that can be easily described as there is nothing in the world like it. That would be my son’s favourite as he is the connoisseur!

Tostada con Tomate
Ingredients
- 4 Slices rustic bread any kind you prefer
- 2 tomatoes
- 1 Garlic clove
- Olive oil
- Sea salt if you like
Instructions
- Roughly chop the tomato and toss it in the blender until it is quite liquidy. Pour it into a serving dish and let it settle for about 10 minutes. I always do this, because the tomato thickens over time.
- Toast your bread.
- Rub the garlic clover over the toast, drizzle with olive oil and spoon over your tomato. You can sprinkle with a little salt if you like. Great flavours!
