Make this Turkey Fried Rice for you next mid week dinner. Using tons of fresh vegetables, precooked white rice and tender pieces of turkey, it’s an all in one dinner.
Chop All The Vegetables
As with most fried rice dishes and stir fry dishes, all the work is in the prep. You can even get this out of the way early in the day and store it in the fridge until cooking time. Who’s that organized. Not me usually…hahaha
Best to Use Leftover or Precooked Rice
When making fried rice dishes, it best to use day old rice if you happen to have it. I know, many of us don’t batch cook rice. No worries. Just make it a little earlier than you plan to make the rice dish and let it cool and get dry.
Drier rice works better in fried rice dishes which is why it’s better to use leftover rice if you have it. All the more reason to make loads and keep it in the fridge.
Chop & Cook The Turkey
I like to chop the turkey in really small pieces. I find that it works really well in fried rice this way.
Season the turkey with salt and add 1 tablespoon of sesame oil to the wok set over high heat. Cook the turkey, tossing throughout cooking, for about 5 minutes. Remove from pan.
Cook The Vegetables
In the same wok, add the remaining tablespoon of sesame oil with the garlic and ginger. Stir for a minute and add all the vegetables except the spring onions. Stir really well and cook for about 3 – 5 minutes. We want the vegetables crisp.
What you’re Looking For in The Stir Fried Vegetables
Like I said, I prefer the vegetables on the crisp side, so I don’t cook them for very long. However, if you like them softer, cook them for a few minutes longer.
Now We’re Going to Get This Finished
So, now we’ll push the vegetables to the side of the pan and add the eggs. Break the yolks and stir them around for about 2 -3 minutes until they are cooked.
Add the rice and turkey and give a good stir. Add the soy sauce and teriyaki sauce. Finish it off with the fresh spring onions and you are all done.
Turkey Fried Rice Ready For The Table
I like this just the way it is fresh off the stove. Or leftover for that matter. But you can add whatever extra sauces you prefer. Sweet Plum Sauce would go well or even Hoisin Sauce. You choose what you prefer.

Turkey Fried Rice
Ingredients
- 1 turkey breast cut into small bite size pieces
- 4 cups long grain white rice precooked
- 2 carrots peeled and finely diced
- 1 red pepper finely diced
- 1 green pepper finely diced
- 1 yellow pepper finely diced
- 1 red onion finely diced
- 1 leek ends trimmed and diced
- 2 spring onions finely diced
- 3 Eggs
- 2 cloves garlic crushed
- 1 inch piece fresh ginger grated
- 1 tsp salt
- 2 tbsp sesame oil divided
- 1/4 cup soy sauce
- 1/4 cup teriyaki sauce
Instructions
- Season the turkey with salt. Heat 1 tablespoon of the sesame oil in the wok set over high heat. Add the turkey and cook, tossing regularly for about 5 minutes or until cooked through. Remove the turkey from the wok.
- In the same wok, add remaining sesame oil with garlic and ginger. Stir for a minute and add all the vegetables except the spring onions. Cook, tossing regularly for 3 – 5 minutes.
- Push the vegetables to one side of the pan and add the eggs. Break the yolks and stir them until they are cooked, about 2 -3 minutes. Stir into the vegetables.
- Add the cooked turkey, rice, soy sauce and teriyaki sauce. Stir well, remove from heat and top with fresh spring onions.
- Serve as a main course or part of a bigger dinner.
