Who plans menus?  I used to be 100% regimented to sitting down every Sunday evening and writing out what we would eat every day for the following week.  It was ritual.  It was printed out and pinned to the fridge so everyone knew what was for dinner and I wouldn’t be bombarded with a million questions about “What’s for dinner?”

Yea, I don’t do that any more.  As much as I did love the simplicity of a menu, I found myself a bit of a slave to it even when I didn’t feel like cooking.  Don’t get me wrong, menus and meal plans are great!  I even have a whole section devoted to menus on the site.  They are wonderful, honest.  I think sometimes flexibility can be used in planning a menu so you don’t end up cooking that chicken casserole when you feel like a stir fry.

Speaking of stir frys, this simple chicken and broccoli one is so good.  This is a classic case of what’s for dinner and you have no idea.  A quick peruse though the food network  and in no time later dinner was on the table and enjoyed by all.

This Chicken & Broccoli Stir Fry was taken straight from the Food Network with very little changes. 

This stir fry really is quick.  I had it on the table in about 1/2 hour from the time I started at the kitchen counter. I call that quick.

Chicken & Broccoli Stir Fry

Ingredients

  • 2 Chicken breast cut into bite size pieces
  • 1 Leek whites only and finely chopped
  • 2 cloves garlic minced
  • 1 inch piece ginger peeled and grated
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon corn starch plus 1 teaspoon
  • 1 tablespoon sherry
  • 2/3 Cups water plus 3 tablespoons
  • 3 tablespoons vegetable oil
  • 1 head broccoli stems and florets
  • 1/2 teaspoon red chili flakes
  • Sesame seeds for garnish

Instructions

  • In a medium bowl combine the chopped leeks, 1/2 of the garlic, 1/2 of the ginger, soy sauce, 1 teaspoon of cornstarch, and sherry. Stir well to combine and add the chicken. Coat well and set aside to marinade for about 15 minutes. Mix remaining cornstarch with 2/3 cups water.
  • In a large skillet set over medium to high heat, add 1 tablespoon of the oil along with broccoli stems and florets plus remaining garlic and ginger. Give a good toss and add 2-3 tablespoons of water. Stir fry for about 3-5 minutes. Transfer to a plate.
  • In reserved skillet set over high heat, add remaining oil. Add the chicken and chili flakes. Cook, tossing regularly, for about 7 minutes. Return the broccoli to the chicken and toss really well. Stir in remaining cornstarch mixture and bring to a boil. Cook for a further 2-3 minutes or until chicken is cooked through.
  • Remove from heat, serve over rice and garnish with sesame seeds.
