Chicken Skewers

This is a great barbecue dish.  These Chicken Skewers can be found served almost every where here in southern Spain and the flavours are fantastic.  They most commonly use pork, which I love also, but these are chicken.  They are traditionally called Pinchos Morunos in these parts and it would not be a barbecue without them.

What’s great about them is that they use few ingredients and you can use chicken or pork for them. As I stated before, they do traditionally use pork which works fantastic. But I’ve got one child that’s not keen on pork, so I usually stick to chicken to please all the taste buds in the house. The forever story of a mom!

Chicken Skewers

Spice things up with these Moroccan spiced Chicken Skewers

Ingredients

  • 2 large chicken breast cut into cubes
  • Juice of 2 lemons
  • 3 cloves garlic crushed
  • 2 tablespoons olive oil
  • ½ teaspoon turmeric
  • ½ teaspoon sweet paprika
  • ½ teaspoon cumin
  • ½ teaspoon ginger
  • Fresh ground pepper and sea salt

Instructions

  • Mix chicken together with all ingredients. Stir, cover and refrigerate for a few hours. When ready to cook, remove from fridge and push the chicken lengthwise onto skewers.
  • Preheat the barbecue to medium to high heat. Cook chicken for about 8 minutes per side or until done. Pour over extra marinade while cooking. Do not overcook the chicken or it will by dry.
  • Goes oh so well with any salad dish!
