You can’t go wrong with good old fashioned Chocolate Chip Oatmeal Cookies. These cookies have a crisp edge, a chewy inside and are loaded with chocolate chips and oats. They are a great make ahead treat to keep on hand in the fridge and they even freeze great.
It’s probably safe to say that Chocolate Chip Cookies were the first homemade cookies I’d ever made in my life. They are easy to make with no fussy or complicated ingredients and everyone seems to love them. Much like my Classic Zucchini Bread, these are a real winner.
Of course, my first batch weren’t perfect and over the years I’d perfected the recipe by trying out different methods and variations. These Chocolate Chip Oatmeal Cookies are a slight variation on my regular Chocolate Chip Cookies and they are fantastic!
What Makes These Cookies So Great

Ingredients
- Butter
- Brown sugar
- White granulated sugar
- Plain flour
- Rolled oats – I used regular old fashioned oats.
- Chocolate chips – I used semi sweet chocolate chips for these cookies.
- egg
- Baking soda
- Vanilla
- Salt

Instructions
- Preheat oven to 350 degrees F. Line a baking tray with parchment paper and set aside
- In a medium bowl, combine flour, oats, baking soda and salt. Set aside.
- In a large mixing bowl beat the butter on high speed for a minute. Add the brown sugar, granulated sugar, egg and vanilla. Beat until mixture is combined, scraping sides of bowl occasionally.
- Stir in flour and oat mixture until combined. Fold in chocolate chips.
- Drop dough by rounded teaspoons 2 inches apart onto the cookies sheet. Bake for 7 or 8 minutes or until edges are lightly browned but still soft in the middle.
- Remove from oven and place the tray on a cooling rack. Allow to cool for about 5 minutes before removing and placing them on the cooling rack. Repeat for all cookies.
- Once cooled completely can be stored in an airtight container.
Baking Tips
- Use the right type of baking sheet/cookie sheet – Thin baking pans tend to get really hot and the cookie will start to brown before it cooks through and will result in an over baked cookie every single time. If you are baking often, invest in a good quality baking sheet. Dark baking sheets vs. light baking sheets, does it make a difference. Yes it does. Darker sheets will generally brown your cookies more.Why use parchment paper on top of my pan?
- Use parchment paper – However parchment paper will help you cookies from over browning every single time. Plus it stops them sticking to the bottom of the pan.
- Don’t over bake the cookies – Over baked cookies will be crisp, a little dry and crack even. These bake for me in about 7 – 8 minutes. They are crisp around the edges and still soft in the middle. They might appear to be a little underdone, but they will set as they cool.
How Long Will These Cookies Stay Fresh
- On the counter – Store in an airtight container and they will keep for about 2 days.
- In the fridge – Again, in an airtight container you will be able to keep them for up to 5 days.
- In the freezer – Make sure the container you are using is freezer friendly so they don’t get freezer burn. They will keep stored in the freezer for up to two months.
