Citrus Winter Salad

Brighten up any day with this Citrus Winter Salad. A chopped salad with tons of fresh clementines, cucumber, feta and mint wrapped up in a fresh Lemon Vinaigrette dressing.

Salads are great all year long, even through the cold winter months. This Citrus Winter Salad is refreshing and comforting at the same time. It would make a great light lunch or as a starter to a bigger dinner. Serve it with up with some homemade Baguette Bread or the delicious Garlic Knots.

What’s This Salad Like

  • Difficulty โ€“ I would say this is a pretty easy salad to make. Just don’t over toss the salad or it may become mushy.
  • Taste โ€“ This salad has the perfect combination of sweet and savoury. The sweetness of the clementines mixed with the sharpness of the feta and a vinaigrette dressing.
  • Serving โ€“ This salad will easily serve four people. In the recipe card below you can easily adjust servings to suit as many people as you would like to serve.

Chopped Winter Salad

Ingredients

  • Mixed salad greens – You can use any kind of leafy greens that you like. I just used a mixed bag from the supermarket.
  • Clementines – I used 5 whole clementines. I broke them up into sections and then diced them small.
  • Cucumbers – This recipe used two medium sized cucumbers, deseeded and diced small.
  • Red onion – Red onions add a great flavour as well as a pop of colour
  • Feta cheese – I love feta cheese in salads and the flavour goes so well with the sweetness of the citrus.
  • Mint – Fresh chopped mint adds huge flavour to this salad so don’t skip it!
  • Vinaigrette – I made a very basic vinaigrette with just olive oil, lemon juice and a little sugar.

Instructions

  1. Cut salad leaves – Place the mixed salad greens on a large chopping board and roughly chop.
  2. Combine salad ingredients – In a large salad bowl combine the salad greens, clementines, cucumbers, red onion and feta cheese.
  3. Make vinaigrette – Make the vinaigrette by combining the fresh mint, olive oil, lemon juice and sugar. Whisk well to combine.
  4. Finish salad – Pour the vinaigrette over the salad before serving and toss to incorporate. Serve as soon as the salad is tossed.

Recipe Tips

  • Make ahead vinaigrette – You can make the vinaigrette ahead of time and keep it stored in the fridge.
  • Chopping the salad – I used a bag of mixed salad greens for this recipe. I roughly chopped them so the salad had small bites.
  • Drain the clementines – Make sure to drain off all the extra juice from the clementines otherwise the salad will become soggy.
  • Toss before serving – Assemble this salad and toss just before serving. This salad needs to be served fresh for best results.

Substitutions

  • Mixed salad greens – I used mixed salad greens but you can use any leafy greens that you like. Good alternatives would be arugula, spinach or even romaine lettuce.
  • Clementines – You can use oranges or tangerines.
  • Feta cheese – Any cheese of your choice would work well like parmesan, goat cheese, Havarti, aged cheddar or Gouda.
