What are These No Bake Cookies Like

  • Difficulty – This is a super easy, no bake cookie recipe using only 2 ingredients!
  • Taste – These are a sweet, chewy, coconut flavoured truffle like cookie ball.
  • Serving – This recipe will make 24 bite sized cookie balls. In the recipe card at the end of the post you can always adjust serving size easily.

Ingredients

  • Coconutย โ€“ Sweetened shredded coconut was used for these macaroons.
  • Sweetened condensed milk – You can buy this in pretty much all supermarkets in a can. If is often sold in the baking isle.

Instructions

  1. Combine ingredients – In a large bowl, combine the unsweetened coconut with the condensed milk. Stir to combine.
  2. Form into balls – Scoop out some of the mixture with a tablespoon and form into balls. Next roll them in extra coconut. Place on a baking tray. Repeat for all mixture. Place in the fridge for 30 minutes to set and chill.
  3. Serve – Remove from the fridge when ready to serve.

Recipe Tips

  • TIP FROM THE KITCHENย โ€“ Your hands will get really messy when making these and the bars will stick to your hands. After you make four or five, wash your hands so itโ€™s easier to roll the rest of them.

  • Additions – Feel free to roll them in cocoa powder, chopped pecans, chopped pecans, Christmas sprinkles or any other flavour changes that you would enjoy.

Serving & Storage

  • Servingย โ€“ These are great on a big mixed platter of cookies to bring to holiday events, parties, potlucks and more. They are also great just on their own with a cup of tea.
  • On the counter โ€“ For best results, store them in an airtight container on the counter up to about four days. Make sure they are not in direct sunlight.
  • In the freezer โ€“ You can store them in the freezer for up to about a month. Make sure to remove them from the freezer a few hours before serving for best results.
