What are These Appetizers Like
- Difficulty – This is a super easy appetizer that requires minimal ingredients and the novice cook can easily pull it off for an impressive holiday appetizer!
- Taste – These little bites have a crisp yet light pastry filled with a sweetened sauce and a creamy cheese topping. An overall great contrast of flavours and textures. Everyone will love them!
- Serving – This recipe makes 24 little bites which will probably serve 6 people. In the recipe card you can easily adjust the serving size to make more!
Ingredients
- Puff pastry – I used ready to roll frozen puff pastry. It’s easy to use and available at most supermarkets.
- Cranberry sauce – For an easy appetizer, I used store bought whole cranberry sauce.
- Brie cheese – Brie cheese is a soft French cheese that has a bit of a grey exterior. You can buy it in wheels or in triangles. This recipe used one whole 6 oz triangle of Brie cheese.
- Walnuts – Walnuts add a nice finishing touch to the appetizer.
- Parsley – Fresh chopped parsley gives a nice pop of colour without any over powering flavours.

Instructions
- Preheat oven – Preheat oven to 350 degrees f/180 degrees c. Grease a 24 count mini muffin tin and set aside.
- Cut pastry – Cut the pastry into 24 2-inch squares. Depending on the size of your pastry, you may have some left over.
- Fill muffin cups – Press the pastry into each muffin cup. Fill each cup with about 1/2 teaspoon of cranberry sauce. Top with a small piece of brie cheese.
- Bake – Bake between 18 – 20 minutes or until golden and puffed up and the cheese has melted.
- Garnish and serve – Remove from oven and top with chopped walnuts. Remove from muffin tin and serve warm.
Recipe Tips
- Using puff pastry – Make sure you pastry is fully defrosted or it will break when trying to use it. Also, make sure it’s cold or it will be difficult to work with.
- Filling the cups – don’t overfill the cups or the fill will bubble out when baking. I used about 1/2 – 3/4 of a teaspoon per pastry cup.
- Make ahead – You can prepare these up to 24 hours before baking. Just over and keep refrigerated until you are about to bake and serve.
Substitutions
- Puff pastry – You can use phyllo dough, shortcrust pastry, pizza dough, pie crust or even biscuit dough. All of these will yield slightly different results, but they will work.
- Cranberry sauce – I used store bought whole cranberry sauce to make this an easy recipe. Feel free to use homemade cranberry sauce.
- Brie Cheese – Camembert, goat cheese or Feta would all make good alternatives.
- Walnuts – You and leave the nuts out all together or opt for chopped pecans or pistachios.
Serving & Storage
- Serving – Serve these alongside other festive appetizers like the Cranberry Whipped Feta Dip, the Antipasto Christmas Wreath and a glass of Mulled Wine or Homamade Baileys Irish Cream!
- Storage – These are best served hot and fresh, however you can bake them in advance and keep them in the fridge up to one day before. To reheat, just place them on a baking tray and reheat in a preheated 350 degrees f/180 degrees c oven for about 10 minutes.

No, you do not have to remove the rind from Brie cheese before baking. It is completely edible. However, if you don’t like the texture, you can easily cut it off.
You can freeze these from baked. Just make sure they have completely cooled and wrap them tightly. To defrost and reheat, allow them to defrost in the fridge and transfer to a baking tray. Reheat in a 350 degrees f/180 degrees c oven for about 8 – 10 minutes.
