French Toast with Brown Butter Apples

I used to think that bacon and French toast did not belong together in any kind of combination.  Disgusting, was what I really thought.  Guess what?  That attitude has changed beyond recognition.  In fact, I think they should get married.  In this dish, not only do we have French toast with bacon.  There are also warm brown butter apples and pecans.  I don’t think I really need to say much more.  I probably will though.

If you have never had brown butter apples, now is your chance.  They are so delicious and so easy.  The key is using lots and lots of butter.  Yup, a real low calorie breakfast here.  The apples are cooked slowly in the butter with brown sugar and a little bit of water.  It takes about 15 minutes in total, so that really isn’t too long.  They are also versatile and can be used in desserts, with breakfast or on their own.  Sometimes I make them and have them with yoghurt or cream.  Equally delicious.  As it is fall and apple season, they are ideal right now.

  • 4 Slices bread
  • 2 Eggs
  • 1/4 Cup milk
  • 1 Teaspoon cinnamon
  • 3 Apples peeled cored and cut into 1/2 inch slices
  • 2 Tablespoons brown sugar
  • 1/4 Cup butter
  • 3 Tablespoons water
  • 1/3 Cup pecans chopped
  • 4 strips bacon


  • In a medium sized skillet set over medium high heat add the butter until melted. Add the apples and stir well. Reduce heat to medium low, add the brown sugar, water and cover. Cook apples for a further 10 minutes, checking and stirring occasionally. Remove skillet from heat and pour apples along with the browned butter in a dish and set aside.
  • Cook the bacon. Remove from pan and cut up or crumble. Set aside.
  • Whisk together the eggs, milk and cinnamon. Dip the bread in the egg mixture and coat on each side. Place in the reserved skillet and cook on each side until golden brown, about 2-3 minutes per side. Remove from pan and set aside.
  • Serve French toast topped with warm apples, pecans and crispy bacon. Drizzle over remaining browned butter. Serve immediately.
