Ginger & Lime Skillet Chicken

Get dinner on the table in a hurry with this Ginger & Lime Skillet Chicken. Lightly marinaded chicken fillets in fresh ginger and garlic. Then cooked on the stove top in no tome at all. Serve with a crisp salad and dinner is done.

Ginger and Lime Skillet Chicken

Starting this week with this very easy and tasty grilled chicken dish.ย  To the table in 30 minutes, which is great for those busier days. Much like my Tomato & Mozzarella Skillet Chicken, this one’s a keeper.


Notes About The Chicken

  • I used a cast iron grill for this chicken.  It honestly cooks the chicken perfectly as the heat is so even.  Not to mention those great grill marks!!!
  • Also, marinating isn’t essential but recommended.  You will have a more tender and flavoursome chicken, if you give it an hour to marinade.

Ginger and Lime Skillet Chicken

Quick and tangy stove top chicken done in a hurry and goes great with rice or salad!

Ingredients

  • 2 Chicken breast cut in half to make 4 fillets
  • Juice of two limes
  • 1 Inch fresh ginger finely chopped
  • 1 Teaspoon ground cumin
  • 2 Garlic cloves crushed
  • 1/2 Teaspoon sea salt
  • 3 Tablespoon olive oil
  • Small bunch of fresh chopped coriander for garnish optional

Instructions

  • In a large bowl mix together the lime juice, ginger, cumin, garlic, salt and 1 tablespoon of the olive oil. Stir well and add chicken to the marinade. Cover and refrigerate for at least an hour.
  • Set your skillet over a medium to high heat and add the remaining olive oil. Bring to up heat and add chicken to the pan, careful not to overlap them on top of each other. Cook for around 7 minutes and then turn over and continue to cook for a further 7 minutes or until cooked through. Remove from heat, drizzle with extra lime juice and toss over fresh coriander.
