These Individual Lemon Tarts are a great way to get the most out of lemon season. Using puff pastry and lemon curd, these come together pretty quickly!
It’s still lemon season. I have made countless dishes these past few months with lemons as there seems to be no end. Including my delicious Homemade Lemon Curd!
All the low hanging fruit has finished, so now I need a ladder to reach the rest of them. Mind you, at my height, I have needed a ladder most of the time anyway. Still more lemon dishes to come, so stay tuned!
Note: Another way you could make these is to bake the crust unfilled. If you do this, stab a fork in the pastry casings to allow air to release. Bake until the pastry is puffed and golden, about 10-12 minutes. Remove from oven and then fill with lemon filling. Put in fridge to set for about an hour before serving. These are great on their own or topped with fresh whipped cream.

Individual Lemon Tarts
Ingredients
- 3 large eggs
- 3/4 Cup white sugar
- Juice from 3 lemons
- 4 Tablespoons butter
- 1 sheet puff pastry
- Icing sugar for dusting optional
Instructions
- Preheat oven to 350 degrees F. Line 10 muffins with parchment paper and lightly grease. With a three inch circle cutter, cut out 10 circles and press them into the prepared muffin tins. store in the fridge until ready to fill.
- In a stainless steel bowl placed over simmering water, whisk together the eggs, sugar and lemon juice until blended. Cook, stirring constantly. This is really important, otherwise you risk the chance of it curdling. Continue to stir until it becomes thick. This will take between 5-8 minutes. Once it has reached a lovely thick and creamy texture, immediately remove from heat. Put through a fine strainer to remove any lumps. Cut in the butter and give a good stir.
- Evenly fill all your pastry cases with the lemon filling and bake for 15-20 minutes, or until the pastry has cooked through. Remove from oven and let cool n a wire rack. Can be served hot or cold.

Your instructions-when you say cut out 10 3inch circles, do you mean cut the puff pastry into 10 3 inch circles? Iโm assuming?
Hi Sandy, Yes, that’s exactly correct. I just used a cookie cutter and it worked great!
