Citrus season is upon us once again and I have a few lemons to say the least. Let me tell you that there is no substitute for freshness when you cut into a lemon fresh off the tree. These Lemon Scones were bursting with fresh lemon flavour that filled the kitchen with a lemony aroma. A little lemon zest goes a long way
Scones are probably one of my favourite go to easy treats to make. And these are super easy to make and they don’t use a whole lot of ingredients. It will be stuff you already have on hand in your pantry. If you’ve been following the blog for a while, you probably would have seen my Lemon Curd Filled Scones or my delicious Cranberry Scones. And if you look around, you’ll find even more!
Ingredients
- 2 Cups flour
- 4 teaspoons baking powder
- ½ teaspoon salt
- Zest of one lemon
- 1/3 Cup butter
- 2/3 Cup milk
- 1 Egg lightly whisked for brushing
Instructions
- Preheat oven to 400 degrees F and grease a baking tray.
- In a large mixing bowl, add flour, baking powder and salt. Whisk lightly to combine. Add the lemon zest and combine.
- Cut in butter and use the tips of your fingers to incorporate it until it resembles a bread crumb mixture. Add milk all at once and stir until it comes together as a dough. Don’t over mix.
- Place the dough on a lightly floured surface and lightly press it out with your hands. With a small 2 inch circle cutter, cut out 8 scones. You can also spoon the dough onto a baking tray.
- With a pastry brush, lightly brush the tops of the scones with the egg wash. Place on your baking tray and bake for 12-15 minutes. Serve immediately.
A Little About the Lemon Scones
- As for these Lemon Scones, they were a hit. And even if you have almost no time, you will probably find time to make these. From start to hot of the oven just 20 minutes! I mean, you can’t complain with that.
- They really are best out of the oven, but can be eaten at room temperature. You could always reheat them, which is what I did when we wanted to have one. Because I don’t have a microwave, I put them in foil wrap and put them in the oven for about 10 minutes. That does the trick the old fashioned way.
- I also served them with whipped honey butter. Ah, there’s the sugar. Just whisk a little honey into room temperature butter and you are done. Yum!
