Pistachio Oatmeal Drop Cookies

Let the baking season begin! December is just a few days away and I’m ready to start some cookies.  These are super easy Pistachio Oatmeal Drop Cookies with a chewy bite and full of a nutty flavour.

Way, way, way back in June I made these cookies.  Then I forgot all about them.  And just so you know, this happens a lot!!  

You see after I made the cookies and then took the pictures, like most recipes, I let them sit on the camera for a few days before getting to them.  Of course, I finally got around to them on a blistering hot day.  It was June after all.  And when I looked at the pictures they just said “December” to me and not June.  Okay so we aren’t quite at December yet, but close enough.

So now seemed as good a time as any to share the cookies.  Much like my Pecan Oatmeal Cookies and my Chocolate Chip Oatmeal Cookies, they are a great cookie!

They probably aren’t the most obvious choice for Christmas cookies, but they are home made!  And isn’t that what counts…ha!  Aren’t we all supposed to be slaving away in the kitchen for weeks on end to show how much we care?  Ummm, not so sure about that, but it’s a nice idea!

Anyway, I always think it’s nice to have a variety of cookies when it comes to Christmas platters.  I like the easiest of cookies, like these and then more involved bar cookies like Millionaire Shortbread Cookies.  Now those do say “Made with lots of love”.  Well, they must be because they are so time consuming.  But, if you have never made them and love bar cookies, make them!  Another bar cookie that’s a must try are the Partridgeberry Crumble Squares.  Those really are my all time favourite and I only ever seem to make them at Christmas.  Makes them more special, right?

So over the next few weeks I plan to make and share on here more cookies for the Christmas season.  Hopefully, I’ll manage a new cookie recipe each week in the lead up to Christmas, at least that is the plan for now.  Fingers crossed that I hold true to my promise.  I already have a few ideas swilling around in my mind of what I’ll be working on for my next cookie, so don’t forget to check back and see what’s baking!


Notes about the cookies

These are a such an easy drop cookie, there really isn’t a whole lot to say that isn’t in the recipe below.

  • Watch the baking time.  Mine were ready in 7 minutes flat, but it all depends on your oven.  You might need them in there for up to 10 minutes.  If you over bake them, they will be much crispier but possibly a bit dry.
  • Also, I dusted them with a little extra coconut after they came out of the oven.  This is totally optional.

Pistachio Oatmeal Drop Cookies

Ingredients

  • 1 Cup butter room temperature
  • 1 Egg
  • 3/4 Cup brown sugar
  • 1 Teaspoon vanilla
  • 1 Cup flour
  • 1/2 Cup oats
  • 1/2 Cup coconut
  • Pinch salt
  • 1 Teaspoon baking soda
  • 1/2 Cup pistachios chopped
  • 1/2 Cup raisins

Instructions

  • Preheat oven to 350 degrees F. Have ready a large ungreased baking tray and set aside.
  • In the bowl of your electric mixer, beat the butter until smooth. Add the vanilla, egg and brown sugar. Continue to mix on high speed until all combined and smooth. About 2 minutes. In a medium bowl mix together the flour, salt, baking soda, oats and coconut. Next, stir the dry ingredients into your butter mixture. Stir until just combined. Stir in your pistachios and raisins.
  • Drop by spoonfuls onto a baking tray and bake for about 7-10 minutes.
  • Will keep for a few days in an airtight container and can be frozen.
