Make this Sun Dried Tomato Pasta Salad for you next summer lunch or barbecue side dish. A quick and easy pasta salad with peppers, sun dried tomatoes and wrapped up in a tangy vinaigrette.
This is a great Pasta Salad to make in advance and keep in the fridge throughout the weekend. It’s great with barbecues, as a lunch or to bring to a summer potluck.
This tasted really good after I made it. However, It will be much better later once it has had a chance to cool completely and the flavours a chance to blend. So, I recommend refrigerating this for about an hour before serving.
Can I Make Any Substitutions to This Recipe

- Bow tie Pasta – You can use Penne, Spirals or rigatoni
- Green Italian Peppers – Regular green bell peppers can be used
- Peperoncino red pepper – Regular red bell peppers can be used here as well
- Sun Dried Tomatoes – Okay, this one you really need to use. Most importantly, it’s what brings the flavour to this dish. so make sure not to skip it okay!
What Are Sun Dried Tomatoes
Sun Dried Tomatoes are ripe tomatoes that have been dried out in the sun. You can find them in the supermarket packed in oil (the kind I usually use), or the dry ones in a bag.

Sun Dried Tomato Pasta Salad
Ingredients
For The Salad
- 12 oz bow tie pasta
- 1/2 cup sun dried tomatoes roughly chopped
- 1/4 Cup Parmesan cheese finely grated
- Fresh chopped basil
- 2 small Italian green peppers sliced into small rings
- 1 peperoncino red pepper sliced into small rings
- 1 tablespoon olive oil
For The Salad Dressing
- 1/3 Cup olive oil
- 1/3 Cup apple cider vinegar
- 1 clove garlic crushed
- Small bunch of fresh chopped basil
- 2 Sun dried tomatoes finely chopped
- 1/4 Cup parmesan cheese finely grated
- Salt & pepper
Instructions
- First, cook your pasta in boiling water for about 8 minutes. Remove from heat, drain and rinse in cold water. Set aside.
- Next, make your salad dressing by adding all the ingredients in a small glass jar. Put the lid on and shake really well to combine all of the ingredients.
- In a small skillet set over a medium heat, add the olive oil with the green and red peppers. Cook these for about 5-8 minutes until they start to soften. Remove from heat and set aside.
- In a large bowl, combine your pasta with the salad dressing. Give it a really good toss to coat it completely. Next, add the sun dried tomatoes, peppers, parmesan & fresh basil. Stir to combine completely. Cover with plastic wrap and refrigerate for a few hours before serving.
