Here’s a quick and tasty appetizer that you can put together in minutes. These Tomato & Feta Bites are easy to make, they use just a few ingredients and you can put them together before hand!

Who doesn’t love quick and easy appetizers! As much as I love putting together appetizer platters of baked and cooked appetizers, it’s also nice to have a few that you can make it mere minutes. And these Tomato & Feta Bites come together in just minutes. They can be prepped in advance and kept in the fridge just before serving. That’s easy entertaining!

Ingredients

  • 12 Cherry tomatoes halved
  • 6 oz Feta cheese cubed (enough to cut into 24 small cubes)
  • 1 tbsp olive oil
  • sea salt
  • Small bunch of fresh chopped mint

Instructions

  1. Cut the tomatoes in half. Cube the feta cheese.
  2. Skewer 1/2 of a cherry tomato onto a cocktail stick with a piece of cheese. Repeat for all cocktails sticks. Arrange on a serving plate. Drizzle over olive oil, sprinkle over a little salt and top with fresh mint.

Recipe Notes

  • This recipe uses red cherry tomatoes, but you can as easily use yellow or orange. All great! Use firm tomatoes as the softer ones don’t hold up as well on cocktail sticks.
  • Buy real Feta cheese. There a a lot of imitation stuff out there and it just isn’t the same.
  • These can be prepared in the morning to serve in the evening. But don’t add the salt, olive oil and fresh mint until just before serving.

Substitutions

  • Cherry tomatoes – Cherry or grape tomatoes work best for this recipe. You can even use baby kumato tomatoes if your supermarket has them.
  • Feta cheese – I used real Feta cheese for this recipe because it’s so good! You can keep the cost down by using the “Greek style cheese”. It’s not real Feta but a close second.
  • Fresh mint – I love the addition of fresh mint for this easy no cook appetizer, but if you’re not a fan, you can leave it off. Additionally, you can add fresh basil or even parsley if you like.

How long does Feta cheese last in the fridge?

An unopened block of Feta cheese in brine will last about 2 – 4 weeks in the fridge. Once you have opened it, the cheese will last about a week.
