A simple, basic, no frills Chicken Salad Wrap. It could be on your lunch or dinner table today. These are filled with grilled chicken, cherry tomatoes and avocado. A delicious way to spend your lunch break.
This salad wrap is simple enough and is so tasty and healthy as well. I was in a big rush yesterday and didn’t have anything ready for lunch. So, I threw these together in no time at all and they really hit the spot. I didn’t add any kind of dressing to this wrap as I thought it tasted pretty good all by itself. However, Greek yogurt would make a really nice addition or even sour cream.
Wraps are such a great idea for lunch, dinner or food on the go. The great thing about these, is you can make them in advance, wrap them up and enjoy them later. What’s not to love about that.
They can be eaten warm or cold. You choose!
You might notice the ingredients in this wrap were used in the Mediterranean Tossed Salad a few days ago right? I pretty mush try to use up any ingredients I have in the fridge before moving on to new stuff. So, quite often many of the same ingredients get used in several recipes in a week. Then we move on to new stuff!!

Chicken Salad
Ingredients
- 4 Tortilla wraps
- 1 Chicken breast cut into small strips
- 1 Avocado peeled and cut into 2 inch pieces
- 2 Cups Arugula leaves
- 1 Cup cherry Tomatoes quartered
- 1 Spring onion finely chopped
- 3 Tablespoons olive oil
- Juice of one lemon
- 2 Garlic cloves crushed
- 1 Teaspoon cumin
- Sea salt
- Black pepper
Instructions
- In a large bowl, combine 2 tablespoons of the olive oil, lemon juice, garlic, cumin, salt and pepper. Stir and add chicken. Coat the chicken and leave a few minutes.
- Lay out four tortilla wraps and add the arugula leaves, spring onions, avocado and tomatoes. Heat a large skillet over high heat and add the remaining tablespoon of olive oil. Add chicken all at once and cook over high heat until it is browned and cooked throughout, about 8 minutes. Remove from pan and top off each tortilla with the chicken. Wrap them up and serve!
